We're taking our first family trip May 2013, so we're getting close to needing to make our ADR's.
We plan on doing the Dining Plan. We're not big breakfast or lunch meal eaters so prefer to use our Table Service Credit for dinner.
We have a 4TO DD so a princess dinner is a must. Would also like a character meal that includes Minnie if possible.
Other than that - what are suggestions for the best dinner options per park?

For our family Chef Mickey is a must do with the Mickey, Minnie, Donald, Goofy and Pluto. Food is average but the character interaction is great. We also really like the Princess dinner at Akershus in Epcot -- good food and you see about 4 different princesses. You also get a picture with Belle before your dinner. Another great option with small kids is the Crystal Palace in MK. Good food and Winnie the Pooh and friends. Hope this helps some. Good luck with your Planning! :)
 
We always have breakfast at Tusker House in AK, the characters dress in safari costumes, it's really cute and Minnie is there. We also like 1900 Park Fair at the GF, it's dinner with Cinderella, Prince Charming and the step sisters. All the princesses are at Cinderella's Royal Table in MK but be ready to make your resv. as soon as they open on the 180 day mark. Our favorite non-character meals are LeCellier in Epcot and Ohana at the Polynesian. Good luck and have fun planning!!

Due to the way the DDP is designed, this is probably the best bet anyway :). (Higher value per credit at (most) dinners.)

Sounds like Chef Mickey's would be right up your alley. Close to MK to make travel easier and has the fab 5. Not sure how it's been recently, but there are several reports of the food being not that great and that it's more about the experience though. Alternatively, Tusker House in AK would also work, though it won't have the same characters (Minnie will still be there).

Some of my favorite dinners include:
Epcot - San Angel Inn, Via Napoli
Magic Kingdom - Prefer to go to Kona Cafe (Poly) or Grand Floridian Cafe (Grand Floridian) on my MK evenings.
DHS - Mama Melrose's, 50s Prime Time, and Sci-Fi are all decent. Yacht/Beach Club and Boardwalk restaurants are also nearby which helps a bit.
AK - None really inside the park (that is, I haven't tried any of the in-park ones for dinner), though any of the restaurants at Animal Kingdom Lodge (both parts) are great. (Boma, Jiko, and Sanaa)
