For most cruises, it's 90 days for concierge and 75 days for other cabin classes. Note that you must be paid in full before you can book shore excursions and onboard activities.

Cruises of longer than 10 days and cruises that depart out of non-US ports must be paid in full farther in advance.

It actually depends on the cruise. Regular closed loop cruises out of PC, Miami, Galveston, etc. are 75 days before sail. If you are concierge or a repeat cruiser, that number changes if you want earlier access to online check-in and reserving Palo, shore excursions, etc. Med and repo cruises often have an earlier PIF date; the WBPC was 120 days.
