Crockpot and Easy Meals "Index post 372"

Every Year around this time I always check the disboards for new crockpot recipes. I have used many yummy recipes. It is definately a good time of year for crockpot meals and Easymeals for all the people on the go! Here are a couple of new Budget friendly meals that I have used lately.


Split pea Soup
Ingredients
1 bag of split peas
1 ham bone/(can use hamhocks)
2 carrots peeled
1/4 of cup onion
2 celery stalks diced and use stems
1 or 2 garlic cloves
1/4 cup fresh parsely or 2 tbs dried parsely
1 and 1/2 qts of water
layer ingredients do not stir cook 4-5 hours on high or 7-10 hours on low
Right before serving remove bone and shred in meat to the soup

One of my favorites:
Smothered Meat Load

1 lb of ground pork
1 lb of ground beef
1 can of evaporated milk
1 can cheader cheese soup
1 can cream of mushroom soup
1 container of mushrooms
1 pack of beefy onion soup mix (Knorr or Wylers)
1 box of shake and bake (both packs)
1 egg
1 package of O Brian Potatoes. (by Oreida - hashbrowns that have green pepers and onion in it)

Mix pork, beef, egg, milk, one package of beefy onion soup mix, full box of shake and bakd (both packs) and half a can of cheader cheese soup together.

Pour package of o Brian Potatoes into the crock pot covering the bottom completely.

form the meat mixture into a ball and place in the center of the potatoes. You do not want the meat to touch the edge of the crockpot. Potatoes will protect the bottom.

Pour remaining cheader cheese soup, cream of mushroom soup and mushrooms over the top

Turn on low and cook for 8 hours! :)

My whole family loves this!
 
1 whole Roasting chicken
1/2 cup parsley
1 whole lemon (juice from)
1-2 cloves garlic
pepper and salt to taste

Cook in the crockpot 7-8 hours on low 4-5 hours on high

Anyone else have any budget friendly quick meals?

Chili:

1 large can petite diced tomatoes
1 large can tomato sauce
1 small can tomato paste
2 cans black beans
1 lb ground beef
1 package Carroll Shelby's chili mix kit
1-2 diced green peppers
1-2 diced onions
Jalapenos to taste (if you like it hot)

Put all ingredients in crock pot, stir, cook for 8-10 hours on low.

I use Walmart brand everything, and as I am trying to lose weight, I usually use the leanest ground beef I can (96/4) but I am sure that you could make it cheaper by using the less lean stuff.
 
I got this one off of recipezaar about a year ago. I make it all the time. It's super easy-- you don't even have to defrost the chicken!!!


Crockpot Chicken with Black Beans and Cream Cheese:

Ingredients
4-5 boneless chicken breasts

1 (15 1/2 ounce) can black beans


1 (15 ounce) can corn


1 (15 ounce) jar salsa, any kind


1 (8 ounce) package cream cheese

Directions
1)Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2)Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3)Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4)Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5)All done and enjoy!

Edited to add: I usually serve it over white rice!
 
I bet that would make a great enchilada filling too... I do the same thing as the above recipe without the cream cheese, and with a can of green chilis, a sliced onion, and chopped cilantro added in, and then stuff enchiladas with it.


Okay, now I'm hungry! :laughing:
 


All of these sound great. I'm going to try the split pea soup tomorrow. Heres one of mine that I'm making today for the first time:

1 chuck roast
1 pkg dries italian dressing
1 can beer
1 jar of pepperocinis

cook all day in crock pot

good to shred and put on buns

Have never had it, sounded good, looks good, and smells good!!!
 
This is a great one I got online a couple months back and my family loves it!

Salsa Chicken

4 Boneless skinless chicken breasts
1 packet taco seasoning
1 cup salsa
1 can cream of mushroom soup
1 cup sour cream


put chicken in slow cooker, sprinkle seasoning on top. Add soup and salsa and cook on low 6 hours. Add sour cream after cooked and stir together. Serve over white rice.

* I have cooked on high for less time MOST times I have made it, and works out just fine. It has become my quick meal in a pinch. Also I use the cream of mushroom- Healthy Request, and I use only a half packet of seasoning to cut the sodium, and the taste is still great! ENJOY!
 
How about meatless crock pot meals, anyone??
I do make a vegetarian chili, but other ideas would be appreciated.:goodvibes
 
I have this in my crockpot right now:

Vegetable Beef soup: Add all ingredients to Crock pot (5 qt)

1-1 1/2 lbs Browned ground beef (seasoned)

Two small bags of vegetables (use whatever kind of veggies you like, I like to use a bag of Kroger mixed vegetables and a bag of Kroger veg soup veggies)

2 Large cans of petite diced tomatoes

fill one of the tomato cans with water and add to other ingredients in crock pot


Add seasoning to taste, salt, pepper, garlic powder, oregano, parsley (I just add whatever I have on hand)



Cook on low all day................



Yummy !!!!! And awesome served with cornbread !
 
Same with the chili... subsititute some kind of beans for the ground beef? Maybe kidney or chili beans? And/or add in a can of corn?
 
Today I made Chicken breast with two cans vegall(added in the last 20 minutes)
It was so good after being out in the snow.

I would also like to know some veggie meals in the crock pot, i usually make beans if i dont want meat
 
I made Honey Baked Chicken the other night. It was really easy and very tasty.

4 split chicken breasts
2 tbsp honey
2 tbsp melted butter
2 tsp mustard
1/2 paprika

Place chicken in the crock pot, mix remaining ingredients and pour over chicken. Bake on low for 5-6 hours.
 
Slow Cooker Chicken Taco Soup

1 onion, chopped
2 (10 oz) cans diced tomatoes with green chilies
1 (16 oz) can pinto beans, undrained
1 (15 oz) can black beans, undrained
1 package taco seasoning or 4 tablespoons
1 (15 oz) can whole kernel corn, drained
4 skinless, boneless chicken breasts
1 (8oz) can tomato sauce
1 (12 fluid oz) can beer or cola
Shredded cheddar cheese
Sour Cream
Tortilla Chips

Place the onion, diced tomatoes, pinto beans, black beans, corn, tomato sauce, taco seasoning and beer in your slow cooker. Mix together. Lay chicken breasts on top of the mixture, pressing slightly until just covered by the other ingredients. Set slower cooker on low heat, cover and cook for 5 hours.

Remove chicken from soup and shred. Put shredded chicken back in soup and continue to cook for 2 hours.

Serve topped with shredded cheese, a dollop of sour cream and crushed tortilla chips.

1lb of stewing beef
half cup sliced onion
1 can of cream of mushroom soup
1 tbsp each of paparika and worcestershire sauce
1/4 cup water
4 ounces of cream cheese
1 can mushrooms

Put beef in the slower cooker, top with onions, sprinkle with paprika

Mix soup and water and worcestershire sauce, pour over beef and onion.

Cook low for 8 hours. just before you serve it, mix in 1 can of mushrooms drained and the cream cheese, stir until melted. Serve over egg noodles.
 
I make an easy 'pot roast' by throwing stew meat chunks, a bag of baby carrots, chunks of onion and a can of golden mushroom soup in the crock-pot...I season with a good few shakes of pepper and leave all day. When I get home I whip up some easy mashed potatoes from a bag- like Betty Crocker better flavored to go with the gravy it makes. Tastes just like a pot roast or thick beef stew.
 
32oz chicken broth
2 cans diced tomatoes
1 can diced tomatoes with green chilis
6 oz tomato paste
2 cups frozen corn
2 cups cooked chicken
1 tsp garlic powder
1/8 tsp chili powder
corn tortillas
cheddar cheese

Mix all the ingredients in the crockpot and cook on high for 4-5 hours.

For the tortilla strips, cut a stack of 10 tortillas in half. Then slice them into 1/4" slices. Fry in hot oil in a skillet and drain on paper towels.

Serve the soup with the tortilla strips and cheddar cheese.
 
Crock Pot Mac & Cheese

3 cups milk
3 Eggs
1 Tbs dried minced onions
1 Tsp garlic powder
1 Tsp paprika
1 box noodles (uncooked)
4 cups shredded cheese

Whisk together 1st 5 ingredients. Stir in noodles and 3 cups of cheese. Top with remaining cup of cheese. Cook 6 hours on low.
