Category 5B v. Category 4 v. Category V

Sailing on the Fantasy in March. Booked onboard last March so I think we received a good rate. We are going to get to the Port early so will try to get an upgrade (I know, not looking good). Two parts: What is the difference between a 5B which we are booked into and a category 4 (I have looked online, can't see much difference?). Second, if they do have level V, what do you think the ballpark price difference will be?
