I totally agree! We ate at CG on 2/20 at it just wasn't excellent, which is my expectation for signature dining. We'd had a really great meal at Brown Derby (despite an overwhelmed server) two days earlier, so I know Disney can do it!
We had ADRs for 7:30 p.m. and weren't seated until at least 8:10 p.m., which was a bad start. The bar area was crowded, it seemed people were eating full meals at small tables by the bar and then there wasn't enough space for those waiting. This was our second dinner at CG and both times we had long waits.
Atmosphere wise, I thought that the restaurant seemed chaotic--it didn't help that a 6 year old tipped her chair over during Wishes and hit her head on the floor (it was awful!)--and a bit disorganized.
The flatbread pizza was good as was the apple salad with winter greens, which I'd highly recommend. For our entrees, DH, DD12 and I all ordered the filet. DH seemed to enjoy his, but mine was a bit undercooked for medium rare and it was really tough. The server had described the filet as "really tender, not as tender as Kobe, but close to Austrailian." I literally hacked at it. In addition, the asparagus was overcooked and over-buttered. By the time the server realized that my meal just wasn't right (he seemed to prioritize his other tables ahead of us the entire meal, forgetting DD12's drink and rushing around), DD9 had literally fallen asleep at the table. He offered to make it right, but I was tired of CG at that point and just wanted to keep the meal moving.
For dessert I had the creme brulee, which was good, but almost too cold. DH had the caramel apple pie, which he liked and DD12 had the kids' rice crispie sushi which was really fun.
We left the restaurant at 10:30 p.m., so it was three hours from entering the restaurant for our 7:30 p.m. ADR to exit. That's just too long. I love a great meal, but one that drags along due to a long wait for a table and slow service is a problem.
