Bruschetta
Hollywood & Vine - MGM

1 lb diced tomatoes
1 T. French basil chiffonade
2 T. diced onions
1 T. minced garlic
2 T. shredded mozzarella
2 oz. white balsamic vinegar
2 oz. olive oil
Kosher salt to taste
Ground black pepper to taste

Mix all ingredients and serve over taosted Ciabatta bread slices.

Believe it or not, the first time I ever had bruschetta was at Hollywood & Vine. I've tried it several times since then, but this was by far the best! (and not just because it was at WDW!! ;) )

I've never seen white balsamic, though. Hmmmm - another trip to the store!

Thanks again, Margie! You've certainly given me new material for summer cooking. :D :D :D :D :D

What is this? And is Ciabatta bread hard to find? Thanks! This sounds great

I asked the same question on another recipe thread . . . evidently MGM is fond of this term/method.

I found this description by doing a search on Google.
"To Chiffonade Basil:

1. Pluck basil leaves from their stems and stack on top of each other.

2. Roll the leaves from top to bottom into a "cigar".

3. While holding the basil "cigar", make thin slices across the rolled leaves, making sure to cut all the way through the leaves.

4. Lift and drop slices to seperate the slices."

Oh - re: the bread . . . . I would think any hard, Italian-type bread, but if you want to try to make your own there's a recipe for it at AllRecipes.COM

I'll bet you could even use dried basil flakes, instead of fresh! ;)
