Any other "must do's"?

Legoland, Universal, Wet & Wild, Kennedy Space Center, Busch Gardens, Miniature Golf, Fun Spot, Old Town...
 
We took an Airboat Tour last year and liked it. Followed it up with a trip to Gatorland. Took about half day for them combined, lots of fun. Also took a 2 hour trip to Crystal River and snorkled with manatees, which was unforgettable.
 


Universal Studios/Islands of Adventure
 
I'd say Medieval Times...but thats the homer in me. Gotta do it at least once.
 
Unless you are there for a very very long time (as in several weeks) it's better to plan to do less, not more. Orlando is chock-full of interesting things. Pick a very small number of them to focus on, and if you are bored (unlikely) add on when you get there.
