How much should I expect to pay for a glass of wine or a mixed drink at the restaurants?

You can expect to pay anywhere from $8-$12.50 for a cocktail and about $5-7 for a beer.

allears has menus, but only some have the actual drinks listed on them. I've copied some below examples from San Angel and Tutto in Epcot.
