i know you are able to carry on 6 beers per adult over 21. Do beverages like White Claws, which are a hard seltzer fall under this category?

Best case, yes. Typically I've found they don't really check what is in the cans as long as it's just 6

Yes you can take these on. I just got off the Dream and carried on 6 Smirnoff malt beverages (spiked seltzer waters). FYI. You can’t find these at other ports so if you want to take enough have someone else carry on 6 more for you if they are willing to pick up their beer in the next port which is still cheaper than what Disney charges on board!! Then you have plenty!! We saw someone get their liquor confiscated when going through customs getting on the boat!!!
