Rose and Crown - depending on time could combine with Illuminations.
Raglan Road - dancers, live music
Yak and Yeti when in Animal Kingdom
Sanaa - great for lunch, early dinner because you can combine a savanna view
Yachtsman Steakhouse - best steak and wine list outside of
Victoria and Alberts - dress up, service, food - 5 stars
Hollywood Brown Derby - great for cocktails and refresh in DHS - as well as the Fantasmic pkg

We only have 3 must dos, otherwise we just kind of play restaurant roulette since we don't make ADRs until the night before or day of.

I have to have tea at the GF. We have to have the QS at Morocco. We have to eat a Brown Derby in HS. Caveat on the last one - we don't do the dining plan, used to but just don't like having to structure out meals, so when we eat at Brown Derby I get a cheese plate and the appy Cobb Salad which is huge. My son gets and entre, shares my cheese plate and if we want we usually share a dessert. We aren't huge dessert fans, love appys and always have an adult beverage. We've eaten at every TS in WS except for German, I don't do buffets.
 
Every year we like to try new places to eat. Though we have enjoyed many there are two that are a must:

Narcoossees at GF - their surf and turf is amazing
Kona Cafe at Poly for breakfast
 
I've only been once, and we are planning another trip for 2017 also.
I loved Cape May (Beach Club Resort) for breakfast the day we left. Buffet. Goofy, Donald, and Mickey were there.
Be Our Guest in the Beast's Castle at MK was yummy. Be sure to get a cupcake.
The whole family loved 1900 Park Fare at the Grand Floridian.
 
Our must-do's are:

MK - Liberty Tree Tavern - dinner. Home style comfort foods - my husband's absolute favorite!
BOG lunch - cupcakes are amazing, and I love the turkey and roast beef sandwiches.
Columbia Harbour House is really good, too. Nice and fresh salads on a hot day. Mmmm...
Epcot - Via Napoli. We love their pizza!
HS - 50's Prime Time Cafe. I love their pot roast and vanilla coke. My daughter loves their french fries. My husband hasn't found a favorite there yet, but he doesn't complain when we go there.
AK - Flame Tree. I really like their pulled pork.
DTD - Wolfgang Puck Express has great pizzas and salads IMO.
Ghiradelli - chocolately deliciousness!

Resorts - AKL Sanaa. Great food with great views of the animals.
GF - 1900 PF for breakfast or dinner. Different experiences but both very entertaining. Great food - strawberry soup is my favorite! I also enjoy the Grand Floridian Cafe. It's a quiet little place. I really like their breakfast and dinner.
Poly - Kona for lunch. My daughter and I really enjoy it here. I love their chocolate banana creme brulee! Ohana breakfast was okay IMO - good food, but the character interaction wasn't my favorite. We love Lilo & Stitch, it just felt very rushed.

We only visit five TS eateries at WDW when we go there for an actual meal.

Sanaa is great if you can get a seat by the window during the day/see the animals.

Our new favorite is Boathouse at Disney Springs - can get a great steak or a great burger, lots of options. That is a must do for every trip. Other favorites are Yachtsman, Le Cellier, Via Napoli, Narcoossee, California Grill.
 
Our absolute must-do's are: 'Ohana and Via Napoli

'Ohana is our first night tradition. Great food and a wonderful atmosphere. We consider it a nice way to ease into our vacation.

Via Napoli has the best pizza and tiramisu we have ever eaten.

Though Teppan Edo is becoming a staple for our trips as well.
 
As TheRustyScupper already noted, two of my favorites are not on the DDP. For those that are, my DH really likes Monsieur Paul for the duck breast and wine options and I enjoyed the fish options (2 TS credits BTW). We both enjoy Boma for Dinner, there are so many options for new and different foods and you can just take a taste of everything as it is a buffet. We both enjoy the Napoleon at the French Bakery and get it "to go" and eat it for breakfast the next day. We "liked" Teppan Edo but were disappointed with the fact that they do not offer drink options beyond THEIR drink menu. We both like the Yachtsman Steakhouse and Raglan Road (extensive menu). However, there have been inconsistencies with the quality of service in some of the restaurants and food is becoming more and more standardized across the parks. For example, I had an ADR at the Hollywood Brown Derby for lunch. We arrived and were seated in a half empty restaurant. After 20 minutes of watching CMs chat with eachother in a corner, we had still not been given menus or water or even acknowleged. We walked up to the check in desk and told them we were leaving and why. We just did a QS sandwich and it kind of clouded our whole DHS day.
 
Our favorite restaurant seems to get over looked, which is The Wave. It's amazing!
 
Le Cellier- for a special meal
Coral Reef- although we probably the odd ones out on this one.
Akerhaus or Chef Mickey's- for characters. I also really enjoy Tusker House for the food but my husband does not enjoy the noise level.
I also enjoy the coral reef and am surprised when I see all the complaints about it!
 
I've enjoyed crystal palace for breakfast and tusker house for lunch. Tusker house for lunch and dinner has a diverse cuisine to choose from- Mediterranean, Indian, African, American, etc.
 
Unless you go for a month, there is no way you can cover all the places I list here, but these are among our faves, some we do every trip. Keep in mind, resort meals may be a little tougher to get too, so allow time. I will put specific meals of specific foods for some listed.

MK and resort area...Liberty Tree Tavern(lunch), Plaza, Tonys, The Wave(all 3 meals are good, really love breakfast here), Kona(all 3 meals), Ohana(dinner), Grand Floridian Cafe, Trails End(breakfast), go give Roaring Forks a try just to look around Wilderness Lodge(most beautiful resort on property if you ask me:lovestruc)

Epcot and HS(I list these together since resorts link them and can be walked or boated too within 20-30 mins)...50s Prime Time Cafe(been a must do every trip since 1999), ESPN, Rose N Crown(lunch), San Angel Inn(another must do every trip), Via Napoli(Piccante Pizza), Nine Dragons(Honey Sesame Chicken), Garden Grill(though we have only done this 3 times in 30 plus trips, its always on our radar)

AK...Boma(breakfast and dinner), AK IMO doesn't have any really great TS meals yet(Yak and Yeti is OK, but not worth the time, its a little slow in service)but I will throw out, Flame Tree BBQ has the best QS in all of WDW
 
So my wife and I will be taking our first trip to WDW in 2017! And we are going to get a package that includes the dining plan, but we have no experience with this beast. So we are beginning our research so as to maximize our enjoyment of this aspect of Disney (thank you God!). Tonight, my wife asked, "What are people's 'Must have' sit down meals in the park/resorts?" We are Disneyland vets, but we can appreciate Disney World has many more options and we want to target our efforts. Thank you in advance:D

I just have to state that if this is your first trip and it is just going to be you and your wife, I would think about using the table service credits to go to some of the really nice restaurants that you might normally not be able to afford or just because they are more romantic. Some of these restaurants take two service credits each but I would plan at least one of these special meals just because it would be such a wonderful memory to have for years to come of your first WDW trip.

Must do's: CRT for the atmosphere. Crystal Palace - best early entry breakfast. BOG Dinner - only place to meet the Beast and his castle is so amazing to see on the inside... straight out of the movie (and the only place you can get booze in MK).
