Wednesday: I Have my workout class. Leftovers
Thursday: Baked ziti from the freezer, salad
Friday: Homemade pizza and salad if we have any leftover
Saturday: Leftovers
Sunday: Slow cooker pasta fagioli

Monday - grilled salmon, rice, asparagus
Tuesday- pot roast
Wednesday- tortellini with Italian sausages/ green beans
Thursday - chicken salad on rolls, fruit smoothies
Friday - leftovers
 
Yesterday-dinner out with gift card from in laws
Tonight-breakfast for dinner (eggos, eggs, grapes, apple slices)
Wed-beef stroganoff
Thurs-kids having pb&j's because it's my 15th wedding anniversary and we are going out for Thai food
Fri-pizza night
Sat-ham, cheesy mac, broccoli and cheese sauce
Sun-leftovers
 
Hit Aldi's (but they were out of acorn squash - sigh) and still need to hit my local grocery for two of killer rotisserie deal this week ($4.99 for a rotisserie chicken, a fresh french bread, and a family sized side dish)...we have a birthday, too, so this will be a little different...

Sun - Rotisserie Chicken, 2 TBD Sides, 1 Fresh French Bread
Mon - Birthday Fondue (Cheese/Chocolate) - 2nd French Bread, Fresh Baby Carrots and Sliced Apples for Cheese; Fresh Pineapple, Banana, Strawberries, and Marshmallows for Chocolate. Puts Melting Pot to shame and saves me the $200 it would cost all of us to eat there, just for cheese/chocolate in the quantities my kids eat:).
Tues - Chicken Stew (Leftover rotisserie chicken, if any, plus both sets of bones to broth, sweet potatoes, onions, carrots, celery), Beer Bread, Strawberries
Wed - Leftover Chicken Stew (plain ravioli for kids), Caesar Salad Bag, Pineapple and Bananas
Thurs - Roast Beef with Roasted Mushrooms and Onions, Mashed Potatoes, Sliced Apples
Fri - Leftover Beef Sandwiches, Baked Fries, Whatever Fruit I have left (or what I get shopping)
Sat - TBD (I think we are gonna use an Indian restaurant groupon to celebrate the birthday member out:))...

Made a change this week - got a great deal on beef stew meat (already prepped), and my kids left no meat on the rotisserie chickens, so I made Beef Stew Tues (that we ate Tues/Wed), instead of chicken stew - subbed mushrooms for sweet potatoes and used my garden rosemary and thyme - my spouse said it was one of the best things he ever ate (score!:)).

With my rotisserie chicken carcasses, I made homemade stock which is now in my fridge. I'm gonna change up the end of the week and do a Chicken Corn chowder Friday in the crockpot (using the stock) or something similar, so we also have some easy weekend lunches in the fridge.

Mon: Shredded chicken tacos
Tue: Pork Chops w/ roasted Cauliflower & Broccoli
Wed: Chicken Chili (with leftover chicken from tacos LOL & added corn... delish!)
Thu: Leftover Pork Chops w/ veggies
Fri: High School Football game - eat at game
Sat: Probably frozen pizza
Sun: Bacon Wrapped sirloin filets on grill, steamed carrots, green beans
 
Monday: 5 cheese ravioli with red sauce and salad (I got a bag for free of ravioli at publix with a coupon I got in the mail)
Tuesday: Slow cooker cheesy chicken and some kind of freezer veggie
Wednesday: I have my late night at work and then a late workout class-I'm bringing leftovers to eat there and H will have leftovers at home
Thursday: Scrambled eggs with cheese and tomatoes, pancakes

Saturday: Left overs
Sunday: Turkey tacos, chips and salsa
 
Still need to run by and pick up a few things, so this is subject to change, but...
Sun - Baked Chicken Thighs with a Honey Mustard Glaze, Stovetop Stuffing, Mashed Sweet Potatoes, Sliced Pears
Mon - Meatballs in Marinara Sauce over Roasted Spaghetti Squash (Plain Ravioli with meatballs for kids - this is a 2 dinner night), Sliced Strawberries
Tues - Chicken Corn Chowder (gonna use up the stock from last week, since I didn't yesterday, and leftover chicken), Homemade Orange Cranberry Bread
Wed - Sloppy Joes, Roasted Butternut Squash with Rosemary and Sage, Red Grapes
Thurs - Milk-based Broccoli and Cheese Quiche, Leftover Soup, Sliced Apples
Fri - Frozen Pizza (or leftovers), Leftover Veg (if any), Fruit Smoothies (with leftover fruit)
Sat - TBD (We will do our one lunch or dinner out and the other meal will be a simple sandwich, fruit, chip one)
 


So I've missed this thread! Having a baby has made life challenging but we have, for the most part, been eating at home!
Here is my new plan:

Sat- butter chicken, rice, nan- had this
Sunday- BBQ' chicken, salad, baked potatoes- ate at the inlaws
Monday- pulled pork sandwiches, homemade fries, salad- had pasta and meat sauce and salad
Tuesday- salmon, rice, veg- had chicken fingers, fries, salad
Wednesday- beef stew in the crock pot- taco salad with ground pork not beef
Thursday- DD has Volleyball away so thinking subway honestly- I put a pork in the crockpot so we had pulled pork sandwiches, salad and Annie's mac and cheese
Friday-chicken tortilla soup, quesadillas- had turkey soup and cheese bread from freezer
Saturday- leftovers - ate out- took father in law out to his favourite brew pub as a thank you
Sunday- roast beef, mash, veg- frozen left overs

Guys; I've long doubted the magic that is a crockpot/slowcooker in my mind. But alas, my bf bought me one and I repent in my old thoughts!! This thing is the greatest thing after cats and carbs! I work all week, so I've been preparing the meals in ziploc bags, freezing them and thawing out the one I'll use the next day for dinner. Set for slow and is done by the time I get back. It's amazing! Now, my journey has come to a halt. I don't know what else to make? Does anybody have any recipe links/pinterest boards they can share with me of freezer/dump(lol) recipes? I prefer the ones that require no cooking on prep day, but anything would be greatly appreciated!

Tue: Hamburger casserole (ground beef, elbow macaroni, tomato soup, corn)

Fri: Football game (since we have to travel, we'll take sandwiches along)
Sat: Bacon wrapped sirloin filets, green beans, steamed baby carrots
 
Giving it another go! I flirt on and off with economizing every now and then but this time it's more of a necessity than just something I'd just like to try. We've experienced a sudden and rather drastic but, hopefully, temporary cut in our income and would like to ride it out without touching our savings. This definitely means eating in! We also have had an extra person staying with us since mid-August while repairs are made to her flooded home so I'm cooking for three rather than the usual two.

Another 2 weeks! But this should be the last of the really "odd" schedule. After October (when our Haunted House closes) I will still be full time, but will be working closer to a 9-5/5:30 schedule. Yay! I have been eating a lot of peanut butter and jelly sandwiches since I have had NO energy by the time I get home.

For some reason Dh and I have decided to really crack down on carbs and sugar... two weeks before vacation. While I believe in what we are doing, I have to question my timing:rolleyes:. Regardless, this is when the momentum hit, and we are learning as we go. It's hard to plan meals but essential that I do. So I will do a few days at a time.
So without further fanfare..

Sunday was- BBQ Mild Italian Sausage, Baked Cauliflower with parm and olive oil.
Monday - Zuchinni Boats with Ground beef and cheese
Tuesday- Cream of Butternut Squash Soup and Baked Chicken thighs
Wednesday-Slow Cooker Bolognese over Spaghetti Squash


I'll do the rest of the week as I research recipes.

Wed: Shepherd's Pie
Thurs: Chicken and Noodles, frozen veg

OK, with Hurricane Matthew gone, back to a normal food planning schedule for us. Last week was crazy at work getting caught up from being closed 4 1/2 days so it was good to have some quicker meals to do. This week's plan:

Sun (10-7): leftovers
Mon (8-5): sausage alfredo with peas
Tue (off): pork roast with spinach and quinoa
Wed (1-10): corn and jalapeno spaghetti
Thu (1-10): crispy chicken and white bean medley
Fri (8-5): cheesy bacon potato soup
 
I got lost in Netflixland yesterday and forgot to take a picture but we had spaghetti as planned, just a tad later than usual. :rolleyes:

We cut cable as part of our scaling back and I've discovered in Netflix/Amazon Prime a whole new way to totally blow an afternoon. Not that I needed any help!
 
Missed dinner last night-forgot we had a late afternoon meeting to go to and gumbo takes a while. We'll have it tonight and probably drop Breakfast for Dinner night.

I had a terrible headache (still do!) and skipped dinner. DH and our houseguest scrounged leftovers from the fridge.
