Eat at Home 3!

Slacked off for a week or two with my record keeping...

Monday- we had BBQ'd chicken breasts, salad and orzo
Tuesday- shepherds pie, salad (we had shepherds pie and fresh yellow beans)
Wednesday- We had a frozen casserole
Thursday- some sort of pasta with meat sauce
Friday- either a frozen casserole (not sure what we have) or a pulled pork
Saturday-chili, cornbread, salad
Sunday- possibly having some friends for dinner- maybe a fondue?

Sunday I had a very late lunch at work plus mom had eaten late so we had ice cream for dinner.

Last night we had chicken and stuffing casserole with salad

Tonight will be spaghetti and meatballs with salad

That is all I have so far. I need to go through the freezer and pantry and meal plan for the next week and a half.
 
So working on my next set of plans... what do you all think about buying a rotisserie chicken, eating a few meals just as a chicken with the dark meat, and then using the breasts to make something else? What would you make with the 2 breasts?

You can do a lot with it. Stir fry, chicken salad, just by itself would be good too. You could also chop it up for chicken tacos, BBQ pizza, or on salad greens.
 


Late, but here's this week:

Monday: Lasagna, garlic bread and caesar salad
Tuesday: Cashew chicken (http://www.foodnetwork.com/recipes/ree-drummond/cashew-chicken.html)
Wednesday: Garlic pepper baked chicken breasts with rice and broccoli (I just drizzle olive oil on chicken breast, add some salt, pepper, paprika and minced garlic, then bake at 375 for 45 minutes)
Thursday: Dinner @ church
Friday: Alfredo tortellini with sauteed peppers
Saturday: Korean beef stir fry

I am trying to stretch all the meals I make on my next plan since I have Gen Con coming up August 3-7 (a huge gaming convention in downtown Indy and I will be downtown all weekend). I don't want to buy a bunch of food for the week and 3 days before the con starts. The less I have to buy, the less money I spend, the better!

Making it into a Stir Fry or asian noodle dish may be a good idea though. I can stretch that stuff out for many meals based on the amount of vegetables I toss in plus rice or noodles. Hmmmm... I don't want to do Mexican because I am going to do a couple Mexican baked potatoes (baked potato topped with black beans, corn, green onions, and sour cream).

I like to do different "cuisines" each week so my family and I don't get bored, and these are some good suggestions for variety. I also buy rotisserie chickens and stretch them out- though typically they only go for like 2-3 meals in our house! You could also do an Italian type pasta meal- with tomato sauce would be cheaper than a cheese sauce, and even add in any extra veggies you may have. I typically use the dark meat in casseroles- from layered enchilada bakes to hash browns and cheese, to veggies and stuffing or rice. The fat from the dark meat tends to keep these dishes moist and add flavor.

Chicken salad sandwiches- Chicken noodle casserole (noodles, cream soup, veggies, chicken) Quesadillas, Chicken and biscuits, Chicken pot pie, Chicken gyros (pita bread, chicken, veggies, greek dressing) Pizza topped with chicken, BBQ chicken sandwiches.

Hope that gives you a few ideas! It actually gave me some ideas for next weeks meal planning :)
 
Well I really need to buckle down on the eating at home, I bought a new car today. So here is the plan for the next few meals

Tonight we had brats with German potato salad and green beans
Tomorrow night is fend for yourself/leftovers.
Saturday will be pork souvlaki with cucumber yogurt sauce, pita bread, salad, and rice pilaf
Sunday will be Salisbury steak meatballs with noodles and salad
Monday will be Asian beef skewers with rice and stir fry vegetables
Tuesday will be whiskey chicken with garlic mashed potatoes and carrots
 
So DS15 made fun of me all week with my meal plan hanging on the fridge, but it's worked and the fridge is emptying out before we leave on vacation. This coming week will be using up more from the freezer: ham steaks, chicken, potstickers, some frozen homemade quiche slices and I'll make pasta to fill in the gaps. I bought a bag each of apples and oranges for this coming week too...many nights I serve fruit instead/in addition to salads. DS13 is a huge fruit eater and not big on the veggies.

I gave me some great ideas, thank you. If not for this next plan then for the future! Working on my plan now even though I don't have my work schedule yet for the second week of it. I need like two more meals that will give me leftovers. I have some meat in the freezer but don't really want to touch it so I have it for later in the month. Maybe I will get like 3 baked potatoes and bake them all up one night. With toppings I can get 3 meals out of those (2 dinner, 1 work lunch). May even do 4 for a second work lunch.

Then I just need one more meal that can give me 2-3 meals worth of food. I have meat in the freezer but don't really want to touch it so I have some later in the month (REALLY tight month since I am taking an extra day off for Gen Con). I do have a blueberry pancake mix I bought last trip to Aldi. I can grab some bacon or sausage at the store and just make enough for a few meals of pancakes...
 
With younger DS visiting family in Texas this week DH decided it would be a good time to do the upgrade on the 2nd bathroom that we've been talking about. So we did date night last Sat. and ate at home every night this week since he's been working on the bathroom little by little after work. Next week we'll be in Atlanta for a few days visiting some of DH's family so that's a few nights I won't have to cook. I'm also still getting used to working day shift and afternoon/evening shift, as opposed to the early morning shifts I used to work. I am off today so I will go grocery shopping for the rest of the week, which only requires getting a few things. Here's the plan:

Tonight: pasta carbonarra
Sat (1-10): chicken spinach artichoke casserole
Sun (12-9): pork chops with herbed veggies and rice
Mon (7-5): I am trying a version of a Lowcountry boil in the crock pot
Tue (off): turkey and black bean nachos with guacamole
Wed-Thu: in Atlanta
Fri: pesto spaghetti and meatballs
 
Got everything planned for the week.

Tonight: BBQ Biscuits with veggies on the side
Saturday: Chicken and pasta
Sunday: Chicken wings and fries
Monday: Chicken legs and rice
Tuesday: Lasagna and salad
Wednesday: BBQ Chicken, cheese and biscuit casserole
Thursday: Grilled cheese and soup
 
I had a wisdom tooth out today, so I'm not yet sure what I'm doing all next week, but I do know the weekend...
Fri - Chicken Tenders (family, not me), Mac and Cheese, Strawberries, Fruit Smoothies (family, not me)
Sat - Italian Sub (family, maybe not me - depends on how my mouth feels), Roasted Eggplant with Pesto, Blueberries
Sun - Chicken Veg (Zucchini, Peppers, Onions) Fajitas, Grapes/Cherries

Saturday: Blueberry pancakes, bacon or sausage

Sunday: 10:30-5:30 Leftovers

Monday: 9-5 Leftovers

Tuesday: 9-3 Eggs, hashbrowns, and toast

Wednesday: Gen Con

Thursday: Gen Con

Friday: Gen Con

Since it is hot as Hades outside and will be even hotter these next few days, my menu plan is mostly "no cook" or grilling outside.....

Menu Plan Week of July 23rd

Saturday - takeout pizza or Chinese
Sunday - tomato sandwiches, Tuscan bean salad and pickled okra
Monday - chicken Caesar wraps, cucumber salad, strawberries and blueberries
Tuesday - sausage/peppers/potatoes foil packets to cook on the grill
Wednesday - egg salad sandwiches, chips and fruit smoothies
Thursday - black bean tostadas, corn/tomato salad, pineapple slices
Friday - bbq chicken (grill), baked beans, coleslaw
 
Football practice starts back up tomorrow-every day of the week-so dinners HAVE to be planned ahead or we'll end up eating junk! As you'll see, the crock pot is getting quite the workout this week!

Here's my plan for the next week:
Tonight- Chicken fajitas. We're going to grill up a bunch of extra chicken breast, onions, and peppers for easy lunches throughout the week.
Monday- Sausage, spinach, and tortellini soup. Kept warm in the crock-pot for after practice, cheesey garlic bread on the side.
Tuesday- Roast beef done in the crock-pot. Mashed potatoes, gravy, and a veggie on the side.
Wednesday- Thanks @westcoastfldisneygirl we're going to try this recipe tonight! (LOVE Pioneer Woman!) http://thepioneerwoman.com/cooking/spinach-artichoke-pasta/ I may add some of the grilled chicken to the pasta for the guys :)
Thursday- Burgers on the grill, grilled zucchini, orzo salad
Friday- This dip, using frozen meatballs cut in half, made in the crock-pot. http://allrecipes.com/recipe/235563/ritz-white-pizza-meatball-dip-created-by-lombardis-pizza/ Served with some pizza dough bread sticks or French bread. Cut up veggies or salad on the side.
Saturday- Homemade sweet and sour chicken with fried rice and cream cheese wontons.
Sunday- Turkey pot pie using pulled turkey from the freezer
 
DH and I decided that we would not be eating out for the rest of the year (Drill and family events do not count towards this - its the EXTRA eating out) so I need to start back making weekly menus
