Favorite On the Road Snacks...

So I am trying to come up with ideas for healthy low carb on the road snacks...We will be traveling to FW at the end of the month to check in 8/2!!! My DH is diabetic (type 2) and will be doing the driving in our motorhome, 3 (8-9) hour days. We don't want to do full out meals for breakfast or lunch (Dinner- we will be stopped for the night by then) we are planning many small low carb snacks throughout the day so he doesn't get tired. I have some ideas (mind you even though it seems like I have a lot of ideas- I have two teenagers so even if I buy one of each item- they will be gone in one sitting and I hate to repeat and have DH complain:
soppressata slices-fresh mozzarella and cherry tomatoes
cottage cheese-melon-(small) morning glory muffin
chicken salad on a lettuce wrap
brie & apple slices on a multigrain cocktail bread
veggies-hummus-taboule
ham-cream cheese-pickle wrap
cucumbers with boursin on a multigrain cocktail bread
greek yogurt, granola and berries
hard boiled egg- cheddar cheese slices w/strawberries and a couple triscuits

I would love to hear what you all to snack on the road!!!
 
I'm not as imaginative as you are, I normally go with grapes, trail mix and freeze dried fruit. Of course, my trips aren't normally longer than 8 or 9 hours and for that long we always stop for meals. Normally if I'm driving to WDW it's about 7 1/2 hours and I'll stop and get a fast food breakfast to go and eat it while driving then snack on the above on the way down. I'm normally there around 2:30 or 3 so I just have an early supper once I'm settled in.
 


Well, I second poster #2 as far as being imaginative :). Also, guess I'm not too much tuned to 'healthy' on vacation! Can understand the diabetic issues though!

We never snack as 'meals' so not as attentive to that side of it. We love pretzels of all types, cut up melons, cheeses, crackers, different nuts, candy, goldfishes, etc. 'Most' finger foods, or easily eaten without too much mess.

What you are fixing sounds pretty 'dainty' and 'snacking' - not too filling for two teenagers (been through that :) ) You might want to think of making hearty sandwiches beforehand that they can just 'grab & eat'! (several LOL)

Try pinterest they usually have great ideas for diabetics. And normal ideas as well. You can start your own boards and pin them so you always have them. I have candida issues so I find many recipes for my issue.
 
jerky (homemade if possible)
PB & apples or celery
Cream cheese and veggies
Greek yogurt with pretty much anything (buy plain and make it savory for veggies or sweeten with stevia and cinnamon for fruit)
You can probably make some low-carb muffins with almond flour or coconut flour to have on hand too. (Trim Healthy Mama has lots of recipes that are high protein and mid-low carb)
 
i have never made beef jerky at home!!!!! I will have to try that!!!! thanks for all the ideas keep them coming my shopping list is growing :-)
 
I go with the jumbo bag of sunflower seeds, usually gone by the time we hit N. Carolina, Jolly Ranchers and soda. DW and DD go with trail mix, and peanut butter crackers. We make the journey in 24 hrs. stopping for fuel and one sit down meal either in MD. or VA.
 
Try . . . apple slices or celery slices dipped in NATURAL peanut butter.
LOVE LOVE LOVE Natural Peanut butter. You just need to make sure you "STIR" it up as the oil separates. Still, this is an awesome snack, but difficult to eat in a moving vehicle (Mind you I am not in a CLASS A, rather a Ford F250 that is crammed with people and "Stuff":crowded:)

Sardines or any "dead fish in a can" as my DH calls it.
As "Snack food" in a moving vehicle? Really? I'll pass on that (not fond of Sardines anyway though:crazy2:)

At first read, I am thinking "Really... Gold Fish?":confused: then of course I realized the cracker versions... Wow, context can really screw you up! :)

I also go with Jerky but I prefer the Venison Jerky that is homemade. The problem is, is that it doesn't last too long.
Trail mix is good but got to watch that it's not too low carb.
Pepperoni and cheese is a good Low Carb snack. Also don't have to worry (too much) about keeping it too cold.
Coffee.... Lots of coffee:coffee:. No drive is complete without coffee. The downside here is that it then requires more frequent pit stops!.

Scupper we like to live dangerously I see Making fun of the driving of the woman who makes your dinner :worship::worship: You are a braver man than I.

I don't pull out the driveway without one The thermos is filled and pot is handy for just in case Leroy Jethro Gibbs got nothing on me.:coffee::coffee::coffee:
 
The funny thing is that I can drink coffee to keep me awake, but I can also drink it before going to bed.

It's pretty bad, that if I drink LESS then a full pot of coffee a day, then something must be wrong. I am beginning to think maybe something is wrong with me anyway, but that's a whole other story! :)
 
Another idea (particularly for the Low Carb types) are the Atkins bars. I know they aren't the greatest for you because they have like a "ZILLION" different ingredients that no one can pronounce, but they are filling, provide energy and are lower in carbs.

Higher in Carb easy choice/snack, I have to say, I love the Granola bars too!
