The first time our niece made the green bean casserole, she used French style green beans instead of the standard cut green beans. Because the French style are so much thinner, they did not hold up well in the casserole and it pretty much lacked in taste and looked like mush.

From years of making it, I know to add a bit more pepper and we add a bit of salt. Also, I always in more green beans then what it calls for. For me, 4 cups isn't always enough.

I don't think you need to add any salt it has enough sodium in it already

Well, cream-of-whatever soup is pretty darn bland. I guess if you don't augment it, it's not surprising that it just tastes like green beans lying about in a bland cream based. But many people like that about it.
 
I add ground white pepper and a bit of garlic powder for taste-then a couple of cans of sliced water chestnuts to give it a crunch. this year though I grabbed a can of the cream of mushroom w/garlic soup at the store-didn't need to add the extra garlic powder.
 
Green bean casserole is my favorite part of Thanksgiving. I jazz mine up by adding shredded mozzarella cheese to the mix, and more French's onions than the recipe suggests. I sometimes (read: always) buy the huge can of onions because otherwise I will eat them all before the casserole is made.
 
I've never had the nerve to taste it, I can't get past how it looks in the bowl and on the plate. :sick:
 
I just make fresh green beans. I do not need the added calories. :thumbsup2

As far as GBC, eh, not my favorite and while I am not picky by any means, I pass on it.
 
I like a broccoli casserole a lot better.
Lots of lightly steamed broccoli.
Maybe a cup of cooked rice.
Melt good American cheese in with a can of the Mushroom soup.
Toss the broccoli and rice..
Pour in and gently fold the warm soup mixture.
Top with fresh bread crumbs (Zap some good white/italian bread in the blender for a second)
Bake till bubbly.

PS: any casserole like that might be bland if one doesn't add enough salt or do something to jazz it up a little.
 
Ohhh, when we do have green beans. If I do not see good fresh ones (which our Walmart actually has sometimes!) we use the good LeSueur premium select whole green beans.
Pour off most of the canned tasting liquid. Add some water. Salt. Some light olive oil. And a dash of dried toasted onions... Simmer until it begins to boil down and flavors are melded and concentrated.

People have asked how I do my green beans.
 
you just need to find a way to spice it up :)
I like to put a little cajun spice in the can with the fried onions and shake it up. And never forget to add salt and pepper to everything!
you can also sauté some fresh onions and garlic and fold it into the cream of mushroom soup.

those are just a couple super simple things to do without going full on homemade

Same here. If I didn't like it, I would have abandoned making it 30+ years ago.

However, I DO understand why many people hate it or at best, tolerate it.
 
I don't like the traditional mainly because of the onions on top. I don't mind bland food! It's the heavily seasoned stuff I have a problem with!

Anyway, the rare times I do make it, I use green beans, cream of potato soup, some cheese slices (yeah the fake kind that melts nice), and top it with bacon. Not healthy of course, but to me it's better tasting than the usual recipe.
 
Canned soup, canned green beans, canned fried onions- is it any surprise it's bland? :confused3

Maybe try it with a homemade mushroom soup, fresh green beans, and real fried onions; bet that would taste great.

Someone brought it to our house one year and it mostly went uneaten. I haven't been able to bring myself to try it. The thought of canned vegetables makes me cringe.

How about just some fresh vegetables roasted or sauteed?
 
You learn to taste test as you go along. I have never tried it before. I do love green beans, fresh is always better.
