How does free Disney dining work?

We're looking at a weekend trip, arriving Friday around noon. (We'll 'check in' even though its very unlikely our room will be ready before three.) We depart Sunday around 1, checking out at noon if we can.

Which Would free dining get us:
5 meals -- 1 meal on Friday, 3 on Saturday, 1on Sunday
7 meals -- 2 on check in and check out day, 3 on Saturday
9 meals -- 3 each day

Also how would the one meal or two meal days be calculated? Would they be the table service meals or the quick service? Would we still get snacks?

Free dining requires a minimum 3 night stay, so you would not qualify for the promotion, if they even offer it.

ETA: ticket requirement is a 2 day base ticket for everyone in the room ages 3 and up

As others have stated, it's per night you stay, not per day. If you have regular DDP, you'd have two table service and two counter service credits per person. If you have DXDP, you'd have 6 meal credits per person that could be used for counter or table service.

As other have stated, a two night stay often doesn't qualify for free dining, but I can't speak to the exact offer you're looking at.

IF free dining is offered ( I haven't seen any such offers yet) then you are entitled to a full day of meals for each night that you stay at a WDW resort. (for the regular dining plan that is one CS, one TS and one snack per day). The credits expire on midnight on your checkout day. Free dining usually requires a minimum number of nights. Depending on the offer, the minimum could be 2 or 3 nights. So with a 2 night stay, you might not even qualify, even if it is offered.

There are three levels of dining and they are all based on the number of nights you stay.

Deluxe gives you 3 TS meals a day

Regular gives you 1 TS and 1 CS

Quick Service gives you 2 CS meals

There are also snacks per day and maybe a refillable mugs.

A TS can be used for a CS but no amount of CS can be used for a TS. Though if you did this it would be a bad idea money wise.

All the credits are in a big pot and you can use them all in one day if you would like.

But as others have posted, Free Dining has stay limits and requires a ticket purchase.

As far as I remember, all free dining offers have been a minimum 3 night stay. I can't remember any that allowed fewer nights than that.
