:woohoo: I'm a LAX mom. I'd love it if my kid got on a college team!!! He loves it - his middle school team went undefeated for the first time EVER last year & he was a starter as a 7th grader, BUT he loves music more & is hoping for a music scholarship. I'm a happy mom either way!!! He's playing football and indoor lacrosse right now.

Doesn't give me much time to cook dinners, so we'll be eating lots of takeout for the next few weeks!!! :)

My starting ingredients:

Chicken Maryland - 2 pieces. I had this in my freezer and figured it needed to be cooked and eaten.

In my neck of the woods we call them chicken led quarters. East coast often has different names for their cuts of meat. Also unless your chickens walk funny, ours have their legs attached to thighs, not breasts! :lmao:

Marilyn, the crab story was funny. My cleaning lady's daughter has a fish tank and they have a little lobster that they find all over the house. Soon it could be literally because they have cats!

Ellen, thanks for your concern. Her wounds are healing, slowly, but the big one that used to be 3"x2 1/2" is now down to about the size of a guitar pick. Some of the holes might actually be considered healed, we're waiting at the doctor's office now.

Tracey, see, grilling is cooking. Now you just need to expand your skills slowly as you have time.

We have been eating package meals, since I don't have any time to do anything! Tonight will be Zatarains Jambalaya (low sodium of course) with keilbasa, okra and chicken added.
 
Dinner tonight:

Grilled Salmon (marinading in Italian dressing)
Bob Evans Mac & Cheese
Corn on the cob
Edamame
And we're Rollin with the frozen yeast rolls again ;)

Served with Brown and Brummell yogurt butter.

That's one of my go to meals! Except I add a package of crawfish tails and a bag of frozen shrimp! So good!!!
And, it wouldn't be a meal without the frozen yeast rolls! I buy those things in bulk!!!!

Oh Ann it is so easy and oh so good.

Snickers Salad

3 large Granny Smith apples cut in bite sized pieces

3 Snicker bars cut in bite sized peices

1 small box of instant vanilla pudding

1 container of cool whip

Put apples and snickers in a bowl. Combine the pudding and the cool whip and incorporate all together.

I suppose you could add nuts or other things and you can adjust the apples and snickers. This is how I make it and it is always a big hit and never any leftovers. I hope you like it!!

Ellen - I'm feeling better today. Hopefully with spring here now, this will be the last of the sickness for this year. Hope that things slow down a little for you and that we see more of you on this thread.

Your snickers salad is soooooo bad! I already feel the snickers sticking to my thighs!

Ann - If you decide to do the shrimp, you might want to add some other seasoning to it. It was nice but I think a little spice would have made it even better.

Tracy - It's the weekend here. I'm hoping for lots of takeout too.

Alison - You're absolutely right. Leg bone is connected to the thigh bone.....:blush: I have no excuse other than tiredness and old fogie syndrome.




So I got me some snapper fillets today. I'm seriously considering making some home made fish cakes tonight with oven fries.

PIO - I have really bad allergies and tend to cough a lot, and more so when I try and lie down to sleep. My Dr. prescribed something called promethazine which keeps you from having the urge to cough. This allows my throat to heal and gives my chest and ribs a break. They are really tiny, gel like caplets. But they work miracles for me, they do not do anything but keep you from coughing...

But you might look into them as an option.

I am so sorry I have been MIA this week. Work has been CRAZY!!! All of the Church activities have started back up this week. It has been great to see all of the kids and the church bustling, but it has cut into my Dis time. :rolleyes: Hopefully it will slow down some.

WFDT ~ Crockpot 3 ingredient roast beef, mashed potatoes, green beans and a snicker salad. We are going over to Elizabeth and Jay's and I am bringing dinner. Fun times, I can't wait to get my cuddle time in with those boys.

We just finished our 5th week of insanity - and I went to buy new shoes, I had been using old ones and they were allowing way too much movement in my feet. I am an over pronator to begin with and needed new kicks.

But I am ready to continue even while on my work trip.....

That salsa got way hotter as it setup... I am not sure I will be able to eat it, but David is loving it...


Hope you are enjoying every minute of the church activities and getting back into the grove of everything.

The roast sounds good, I love a good hearty pot roast.
 
Bigmurle suggested a super idea to get your salsa to your dad. That is how I transport wine on vacation, I sometimes even but it in a boot of my husbands or mine after wrapping it .

Your left over dinner redo...super idea and yummy. Really a whole new dinner!

Ann, David does not like to eat left overs too much so I have to redo them in a way that makes it seem new.

All kidding aside he really wants to go to a good local college and be able to play one or he other although he really really would love to be able to do both. He's the all around athletic type.

And I really think I need to get a bigger space for the hermit crabs especially since I may be getting another one for my godson. :crowded:

Citrus Mango Chicken

six boneless, skinless chicken breasts [NOT thin, cutlet-style], sliced into 1" strips
1T. olive oil
one large yellow or red bell pepper, julienned
one large onion, quartered lengthwise
1 T. + 1 t. Adobo (I use Goya) all-purpose seasoning with pepper
1/2 t. salt
1/4 t. garlic powder
one large orange
one large lemon
one lime
4 oz. mango nectar


In a skillet, over medium heat, saute` chicken with oil until outside of chicken turns white. Add peppers, onions, and seasonings, occasionally stirring so that meat and vegetables don't stick to pan, about 10 minutes. Lower heat and add some zest of the 3 fruits. Cut each fruit in half and squeeze juice from all halves directly over chicken mixture. Add mango nectar, stir, and cover. Continue cooking over low flame. While meat is cooking, prepare a 1-lb package of thin spaghetti, according to package directions. When pasta is cooked and drained, put in a large spaghetti bowl. Pour meat mixture over pasta and serve. Serves 4-6.
