Via Napoli has VERY nice scenery, and I do know what you mean!
I don't care for LTT for dinner, but really like it for lunch. The Colony Salad is really good and that dessert is to die for!
Via Napoli made it onto my must dine list just for that reason alone
I have never been to Via Napoli (yet) but I can only imagine that I think I know what you mean by the scenery.

I tried last year to get some pictures of the scenery in Via Napoli but I was trying to be discrete and none of them came out worth a flip. I think some of the other girls got a couple of decent ones though!

LTT isn't all that great at dinner, but I enjoy lunch there too. It's nice to be able to go in, sit down and have a nice lunch without standing in line to order and searching for a table like you have to do at the CS places. It's really not that much more expensive either!

Ahhh, MK days. My absolute fave. Epcot is my favorite park, but I adore our MK days the most; makes me feel like I am truly a part of the magic.
We've done the Monsters Inc show a few times and I love it, but I always silently pray that I'm not picked to participate. I don't do well being in the spotlight at all!
Epcot via the walkway is a dream of mine. One day I will stay at Beach Club!

I think you made a smart move in making LeCellier lunch...we had dinner there in September and were VERY disappointed...no substitutes, service not as good as we've experienced in the past (we'd like to go back at some point, but it will be for lunch).
You cancelled Plaza? I'm so sad...you are missing the best french fries in all of Disney.
The rest of the plans sound great (especially riding Big Thunder over and over again).
I'll be very disappointed if they won't let me substitute the cream cheese mashed potatoes for the risotto at Le Cellier! I hope that is just a dinner thing.
