The What's for Dinner Thread- June 2012 (recipe index in OP)

Home alone. I made me a big bowl of mac and cheese tonight...well.... within WW guidelines. Real comfort food.

....my DH would break out in hives and get the shakes if he had to go vegeterian.

Never mind your DH. Think how I feel! :headache:

Good morning Girls,

PIO ~ Your pumpkin soup sounds good. It is kind of cool out today. Makes one think of warmer meals. :rotfl2:

I wish I could say that I was starting to think about salad days myself, but its still cold here!

Glad it's cooling down for you.

Brandi- I make a Polynesian chicken that is so easy. I use chicken thighs, bone in usually. i give them a hard sear by using a little il, salt and pepper and tossing them into a screaming hot oven. remove them and drain off the fat. In a separate bowl combine cranberry sauce, french dressing adn onion soup mix. You can use apricot jam as well. Use this to top the chicken and then roast until they are done. Kepp basting the chicken. You can reduce teh dripping to make a nice sauce. Serve with rice. YUM!

Nancy, That sounds awesome! :goodvibes

So David decided that the wanted to do individual pizzas, and make up all the stuff and let them dress it themselves and the bake on the pizza stone!

So I guess we will do that, thanks for all the wonderful ideas...

So a bottle of Chianti, some good beer, and pizzas!

I also have a peanut butter pie for dessert!

Sounds like an awesome way to spend time with friends, making pizza, eating and drinking. :thumbsup2

Hope you have a great night.

Morning girls,

Brandi ~ That sounds like a plan lady. Have a nice evening.

Nan ~ I love the Chicken recipe. I am doing that one!! Yum! Thanks.

DebbieDo ~ In my Opinion, there is NOTHING better than homemade guacamole. :thumbsup2

Alison ~ Good to see you my friend.

PIO ~ I always forget we are opposite seasons. You are on the downward slide to spring.

Kimmar ~ Stuffed flank steak? Care to share? Sounds amazing.

WFDT ~ We are headed to Lincoln to see Matthew. We are meeting for drinks as soon as he gets off work, then dinner at one of our favorite places - Fireworks. Should be a fun night and weekend. Y'all be good. :rolleyes1

Make it a great day.

Hi All!

Debbiedoo- my DD makes her own guacamole and it is delicious!

Ellen- Safe travels!

Brandi- now I want pizza!!!!!!!!!!!!

PIO- It is blazing hot here!

Not a lot of cooking going on here. I do cook but it is on the grill with a salad and veggie. Or because I married a sandwich man leftover whatever i grilled sandwiches :rotfl2: With cucumbers and tomatoes. BORING!!!!!!!!!!!!!!!!!!!

Tonight we are having grilled sirloin with sweet potatoes, salad and cole slaw. And cucumbers.

I also made a cherry angel food cake yesterday to bring to a friend who lost her brother. They were not home and I had topped it with a creamy cool whip based frosting so we will have that tonight. To be honest, it was delicious but ugly!!!!!!!!!!

Does anyone have any recipes for a nice light topping for an angel cake? They taste good but are not always pretty when you remove them from the pan.

Tonight I'm making,

Bacon wrapped asparagus , coffee rubbed steak with a mushroom risotto, and creme brûlée ! Can't wait to get off work and start cooking! Yum :) TGIF

Well dinner was a smash hit... All they kept telling us was that they had never had a better pizza.

I made the sauce from fresh tomatoes and basil, had Italian sausage, pepperoni, onions, roasted garlic, the homemade dough, BACON, and mozzarella.

For those who are interested this is how I make the home made guacamole.

3 avacodos
1 shallot
1 Roma tomato
1 lime.
1 Serrano pepper
3 shakes of garlic salt.

Great with any type of Mexican food or just with nacho chips! ENJOY!!

Brandi - So glad to read that the pizzas were a hit! With those ingredients, it sounds awesome. Now I'll want pizza for dinner.

Ellen - It is 11 days to the official start of spring. Not that I'm counting or anything. :rolleyes1

Nancy - Stephanie Alexander is an Aussie cook/chef here and she has put out an Angel Cake recipe. She uses passionfruit icing. Link here.

NikNakk and DebbieDoo - Thanks for sharing. I think this is your first post on this thread? WELCOME to both of you!

WFDT? I think I'll have to give serious thought to pita pizzas after Brandi's post.

Of course it was a hit! Your pizzas sounded so good. Do you remember Becky? Her pizzas made my mouth water adn yours did as well!

For those who are interested this is how I make the home made guacamole.

I am sending this to Marisa. Thank you!

That cake was beautiful! Mine was not as pretty because I chopped up cherries and added cherry juice. It was a little brown. Now to find a passion fruit :woohoo: Which I love. Want to know how I know???????????? Marisa's DH Jeff makes passion fruit mojitos :thumbsup2

We had them in Hyannis ut not at the "cuddles and Bubbles" hotel.................cannot think of it any other way after the 12 people looking like disco balls screaming it at any passerby :crazy2: And Debbie explaining what teh names of those suites meant............. and then her detailing what she kept hearing from her adjoining rooms.............. and then telling me waht her shower heads..all 4 of them................. were doing :scared:. Anyway, the mojiots were not as good as jeffs. Now I want one!

So dinner has been topsy turvy lately.Last night Welby called and asked if we would watch 2 "savages" for an hour. The girls had already eaten but i tossed out dinner plans out and ordered a pizza. It was just okay.

My Welby has been laid off. She was horrified but Marisa calmed her down. I have to admit I have missed her terribly since she has been working those crazy hours so this is a wonderful thing for me. And it is about me ;) Anyway, yesterday Nola heard that Marisa was painting Kady's room blue. Yup........

"Mama, I want a green room!" "Mama. I want a pink room!" They share a room. :confused3 Several hours later they have two pink walls and two Lime green (DIS colors) walls. :lmao:

I am not allowed to see Kady's room until it is completely finished!

Dinner tonight is grilled sirloin, cole slaw, cucumbers. YUM! Oh yeas, grilled portobella mushrooms for Buddy.

i already know what I want for dinner tomorrow. Fried onions and peppers, macaroni salad and hot dogs! I am craving hot dogs. And you all know I buy those cheapy things that remind me of when I was a kid. I don't care what is in them, I know they are not at all good, but when I miss my Mom I cook them.

The mojoto's sound really good, I have had the passion fruit marga's at La Cava and they are really good.

We had porterhouse steak, mashed potatoes, and creamed spinach last night. I read a dining review of someone who ate at Yachtsman and started to crave that!

Those pizzas sound really good Brandi!

I like hot dogs too! I get a craving for them every so often.

Well tomorrow we see both the RA Doctor and the wound Doctor, so let's hope that between the two of them, they can work out something to give Fran some relief. Tonight we are going out to the Black Bear Diner. We can bring our own bottle of wine and they have no corkage fee.

Good morning Girls,

Nan ~ I am no help on the angel food cake as I like it naked. I don't like frosting or anything. I know I am weird!
Those 2 little ones just make me laugh. And Welby is the BEST mother for painting the walls. How cute.
I agree on the cheap hotdogs. They are the best. They can take the "all beef" ones - I like the .97 ones.

niknakke ~ Welcome!! Your dinner sounds amazing.

Brandi ~ I am so glad the pizzas were a hit. I had no doubt whatever you decided on was going to be good.

debbiedoo ~ thanks for the recipe. I have looked everywhere for shallots here and they are not to be found - ANYWHERE!! So an onion will have to do for me.

Alison ~ Good luck at the doctors today. I so hope they can give Fran (and you) some relief.
I hope you enjoyed your wine last night. You certainly deserve it.

We had a really nice weekend. Of course it went way to fast. I am back to work this morning. I have to hold the fort down for the next 2 weeks as Pastor Tess and her DH are on their way to France.

WFDT ~ French Dip sandwiches, sweet potato fries and coleslaw.

Make it a great day!!

Ellen, glad you had a nice weekend. We're at the doctor now, so let's hope something good can happen!

Hi All!

I am at marisa's, exiled to the living room while she and Kady work on her room. Fine with me, I am waiting for the curtains to come out of the dryer so they can get hung. No iron allowed on these I guess.

Dinner is probably going to be leftovers. Marisa is coming over to put on labels for the wine, I have a crooked eye :lmao:

Allison- know how Fran is, please.

Ellen- glad to see you home!!!!!!!!!!!!!!!!!!

Girls- I am worse than a kid! We have all of our ARD's for this next trip and just got the email confirmation that we have a dinner at Be Our Guest on Nov. 27th, which is our Christmas Party date. YAY!!!!!!!!!!!!!!!!!!!! Been stalking every BOG thread there!

Hi everyone :wave2: Alison was very sweet to suggest I join your thread. This looks like a great group of people and I know some of you from other threads. Cool! I don't often get over the community boards...maybe I need to change that from what I see here. Your recipe section on the front page looks pretty great. :thumbsup2
I love to cook, throw parties fairly often and really enjoy trying new things. Looking forward to all your knowledge, learning new things and having fun.

WFD- My mom's breaded pork chops (fried then baked), Steamed zucchini, baked potato, homemade applesauce and fresh fruit for desert. Just like my mom would fix.

Welcome over here Angel!

Nan - Thanks for asking. The RA doctor said just as I suspected. She can't have her super drug while she has open wounds, but he was able to prescribe something that works with moderate Arthritis. Unfortunately, hers is severe so we'll have to see if it gives her any relief. The other good news she got was at the wound Dr. They said that she can take a shower without having to wrap her leg in saran wrap. She can just remove the dressing, shower and I can reapply it once she is dry.

That is wonderful news Alison. At least it sounds like you are heading in the right direction. Prayers will continue!

Nan ~ I am so excited for your vacation. You all will have a great time.
Back to school - I am in awe. GOOD FOR YOU!!!!! So proud of you.

Angel ~ Welcome!! :wave2: We have some good cooks here and have a lot of fun. Stick around!

Doug is in the playoffs for his league golf. They were at the bottom for qualifying and now going for 1st or 2nd. :cheer2: They played last night and will play for championship next Monday. Pretty cool!!

WFDT ~ Well since we didn't get to eat together last night we will have last nights meal tonight - French Dips, sweet potato fries and cole slaw.

Make it a great day.
