The What's for Dinner Thread- June 2012 (recipe index in OP)

Good morning girlies,

Lindsay ~ WOW - thanks for sharing. I loved it!!

PIO ~ Happy Birthday to you DS.
Enjoy your American company. They are in for a real treat - wish I was coming for dinner.

Merle ~ Your weekend sounds so busy, but also a lot of fun.
I am so enjoying the Olympics. I bet you all are loving the swimming!!

Kimmar ~ Your dinner sounds amazing. YUM!!!

Tonight is the Farmers Market, so I think I will go into town and see if they have anything. I went last week and with the crops and gardens struggling so, they are selling all sorts of other things, such as jelly, hair ribbons, tea towels etc. It sort of has become like a bazzar. But maybe if I get there early enough I can score some green beans and sweet corn. There isn't much this year, so the ones that do have some sell out real fast.

WFDT ~ Grilled burgers and whatever I can find at the market.

Make it a great day!!

....OMG, it turned out BETTER than I expected! :thumbsup2

Grilled Chorizo-stuffed Poblano Peppers

1 pkg chorizo uncooked chorizo - I used this:

johnsonville_chorizo(raw).jpg

1/2 small onion finely chopped
1 T. fresh chopped garlic
1 c. cooked white rice
6 large poblano peppers, halved lengthwise and gutted (you can leave the stem on)
5 oz. Crema Mexicana

1 c. shredded sharp cheddar cheese
and
1 c. shredded pepper-jack cheese, mixed together

Finely dice chorizo and cook with onion and garic over low flame in a covered pan, with 2 oz. water. Meanwhile, cook rice. When rice is fully cooked, add crema and cooked meat mixture and mix well. Spoon mixture into poblano halves. Top with shredded cheese. Grill in a well-heated grill over low flame, until cheese is melted and poblanos slightly roasted, about 10-15 minutes. Serve with roasted corn.

Grilled+Mexican+Corn+with+Crema.JPG

I usually buy fresh Jersey sweet corn, romove the husks and silk and boil in hot water for about 20 minutes. Then I drain the corn, place each cob on an individual piece of tin foil. Rub butter on each cob and sprinkle with s&p, chili powder, and parmesan cheese. Roll each cob in foil and place as close to grill flame as possible, about 10 minutes.

Morning, all! Today I am making black bean soup. An easy day :)

Thanks for the compliments about the video. I hadn't gotten to do a "special music" in my church in a long time so I was really nervous. I honestly haven't watched it. LOL, if I do, I would never get on that stage again OR sing. Cameras are not flattering! Scott, who works in media, hurried to find me after it was over and told me it was clear I had lost some weight on camera. I was soooooooooooooooooooooo happy! Even my tool of a brother-in-law, who was there, mentioned to Scott yesterday that I looked different. If HE noticed, I'm doing something right, lol.

Have a great day, everyone!

And if that isn't enough, I'm having an American Disser and his family come round for dinner on Thursday night. And I'm cooking an Asian meal....I'm starting the preparations with the beef ribs marinated in Soya, garlic, spring onions and sugar. The beef has been marinating over the last 48 hours and I can cook it in a slow oven tonight. I can reheat it in the oven again on Thursday night.
Hoping for some decent food porn from this meal.

I'll also make that Prawn Sambal that I shared some time ago. Stir fry some veg and I'm also tossing up making a sweet and sour chicken tenderloin.nn

I'm guessing that you're meeting up with skier_Pete. I hope yuu have a great meet!

Yes! :dance3:

I met him and his family for coffee yesterday. They are such a lovely and nice family. Really looking forward to having them over for dinner tomorrow.

Morning everyone...

Hope you all are doing well....

Dinner last night grilled pork chops and salad.... Did not stick to my menu this week!

Merle ~ Your weekend sounds so busy, but also a lot of fun.
I am so enjoying the Olympics. I bet you all are loving the swimming!!

It was nice, but very tiring. Yeah I would like it a little better if CNN would stop spoiling things for me. :lmao: I get email alerts from them and always have my email open so when they send the alerts it pops up at the bottom of my computer screen. I try to close my eyes until it goes away then go in and immediately get rid of the email but sometimes I can't help it and I read the subject. :rolleyes1

We were teasing my oldest DN this weekend and telling her she needs to go to the Olympics because her dad needs to be an official and I want to get an Olympic ring tattoo. :rotfl:

Busy busy week again and this weekend will be too, maybe. Supposed to be taking the girls to the fair but haven't talked to their DM to see if they are coming down or not.

Morning, all! Tonight I am picking up Scott from work and we are going to go out for dinner and then get groceries. We probably will eat at Beef O'Brady's. I normally get the boneless chicken basket drenched in teriyaki sauce. Not anymore. I did some menu surfing and found they also have wraps, so that's what I will get. I am doing so good and the weight continues to fall off.

On that note, I went to a spin class at my gym last night. After talking to a trainer about classes, she suggested this one and said she'd move my hand cycle down there. Oh. My. Word. I haven't had that much fun in my life! For reasons I don't know, I don't sweat unless I'm in 100 degree weather with 1000% humidity. That changed last night. I was still out of breath after driving home. I know this sounds odd, but I was SO thrilled! I'm taking Scott with me next week.

Sorry for my yakking about working out, but I was so excited I had to tell you all about it. :flower3:

Have a great day!

Morning Girls,

Lindsay ~ Don't you ever apologize for doing something for you. You are doing amazing and I am so proud of you. You feel for your spinning class like I do about Zumba. I love it, have a ball and can't wait till I do it again. Exercise should be fun, or you won't do it. Good for you!!!

Kimmar ~ Oh my goodness, I am so trying those. Thanks so much for the recipe.

PIO ~ I so hope you are enjoying your Dis meet. How fun. I have met some of my "Best" friends here on the web.

Merle ~ I hope you have a nice weekend.

Brandi ~ You make me laugh. You are so like me - I plan and make list and then do my own thing. It is all good.

Alison ~ How are you doing my friend? I sure have thought of you and Fran. Bless your hearts!!

We have gotten some very welcome rain. It is way too late for the crops but my lawn and flowers sure loved it. It is also suppose to cool off into the lower 90s - upper 80s. Welcome relief for sure. No way are we out of trouble but it was nice.

Busy weekend. Working on the bedroom, watching the boys (Elizabeth has to work and Jay has Guards), watch the Olympics, church on Sunday and dinner at Stephanie and Marty's. Fun fun times. I can't wait!! I hope your weekends are nice also.

WFDT ~ grilled salmon, steamed yellow squash, sliced tomatoes and cucumbers.

Make it a great day!!

I must say you all are a great group of people and love all the encouragement, support and general caring about each other...

So David ordered the Insanity workout of TV last month... Well It finally arrived and we decided we would start it on August 1st....

So.... I must tell you that I have gained 70 pounds since David and I meet 8+ years ago. That is not nice to think about but I can blame myself, drugs, and foot problems, but now it is time to make a change....

Well Aug 1st came and I was scared.... I mean have you seen the infomercial on this stuff, very scary!

We had to do a warm up and then a fit test to find out your starting level.
On the DVD he tells you take as much time as you need between tests, but there are 8 test to take!

I start out strong. I am doing the warm up exercise's, and feeling good about everything for 25 seconds.... Seriously, people put themselves thru this kind of pain and anguish!

What were we thinking!

So I take a break, after a minute I am drenched in sweat and can hardly catch my breath, I am in so bad of shape.

I barley make it through the warm up, and then it is time for the fit test. Crazy jumping and kicking and push ups and ughhh anyway, I did not do good!

At this point, I am panting and gasping and decide that the floor is the perfect place for the pass out, it feels cool against my face... Praying that I might be able to move and stand in the upright position is all I ask for at this time.

I finally find myself and the torture is over, I glower at my DH and sending nasty thoughts his way for trying to kill me, what is wrong with this man, what did I ever do to make him feel this way about me.....

The next morning, I can't get out the bed without his help, walking is not good.... I can't make it down the stairs, I take a handful of drugs, praying for relief, by the time I get work, I am stiff but working out the soreness, I think to myself, prayers answered....

All day at work I am dreading what is waiting for me at home tonight, the first full workout.....

I read on line that most people can't make it through 10 minutes of the first workout, so my expectations are very low for myself at this point.

So Aug 2nd is here and I am dressed and ready for a workout.

He starts with a warm up, then stretching and then the workout start...

Well this chic did not even make it to the stretching part! I was done after 5 minutes of the warm up, DH only made it to 7 minutes. We did the stretching part too but just sat on the floor waiting for that section of the DVD. We NEVER made it to the workout.... O...M...G...

after the stretching, both of us collapse on the floor wheezing, coughing, panting, grasping for air.

I take a long bath trying to soak my muscles and make it to work today. Lots of drugs and I am here, thankful it is Friday and not looking forward to the torture that looms from the DVD player this evening.... We only have 60 more days....

so, if you don't hear from me tomorrow I may be on the floor unable to get up!

Brandi,
I'm glad you can laugh at you situation! I would be in the same boat! I gained about 70 pounds since I met Fran. I've managed to lose about 15 of those pounds and my first goal is to shed less than 5 more. I'm going to set my goals in 15-20 pound increments after that.

Brandi- Holy Moly! :scared:

A little change in my plans for this weekend. DN has a swim practice early tomorrow that she has to be at so I am picking them up afterwards. Then Sunday she has another mandatory practice and meeting in the morning so I am taking her there to meet up with her parents then I am taking her little sister to do something so she is not bored.

That kind of works out as I have lots to get done this weekend and will have a little more time to do it in.

Good Monday Morning!!!!!!!!!!!!!!

Ellen- Thank God for some rain!!!!!!!!!!!!!!!!! I know it is too late for the crops but still, that rain must have been an awesome sight!

Brandi- I am in awe! Marisa dragged me to the gym the other day and I made it ten minutes on the bike. Yup- 10 torturous minutes. You rock in my exercise repressed world!

No cooking for me the past few days. Friday I bought a grinder for Buddy because it was just too darned hot to cook and I wanted a pedicure.

The weekend was spent on the Cape. No, we did not get to see the Cape, we were following 5000 bikes from Sturbridge to Provincetown. Deb participates in the Pan-Mass Challenge, which is a huge fund raiser for the Jimmy Fund and the Dana Farber Institute. 190+miles on a bike in the August heat and as in Sunday's case, rain for some. It takes two days but it was the most impressive thing I have ever seen. Some of the teams came from New York and Vermont. On bikes. And had to wheel themselves back after the Challenge. I think Deb said it was another 200 miles added on. My measly ten minutes at the gym is almost embarrassing.

Anyway, we ate well. I had a variety of fried seafood from one end of the Cape to teh other and back again. Along with several sample (cones) of homemade ice cream. And all kinds of iced coffee! Along with a glass or two of wine. Fabulous Weekend! GOooooooooooooooooooooooooooooooo Deb!

It's Monday night here....already!

I hosted a fellow Dis-ser and his family for dinner last Thursday night. We had a great time chatting and getting to know each other in 3D.

Here's what I cooked, and apologies to those who have already seen this on the 'Anyone Game blog'/PTR. It is definitely the Yee's Have It and Deja Vu! ;)

1. Sambal Shrimp.

0802DisMeet004.jpg

2. Slow roasted beef ribs, marinated in soya, sugar, garlic, spring onions.

0802DisMeet002.jpg

3. Chicken tenderloins, dipped in egg and then spiced flour and baked in the oven.

0802DisMeet003.jpg

I kept the Sweet and Sour sauce on the side. Turned out to be a very good move for the kids.

The sauce.

0802DisMeet001.jpg

4. Stir fry vegetables with shrimp. The sauce is made from oyster and soya sauce. This is another dish my pesky-vegetarian DH can eat.

0802DisMeet005.jpg

This was my plate of food. The first helping, at least.

0802DisMeet010.jpg

I did offer to whip up a chocolate self-saucing pudding for dessert; but as everyone had second helpings for dinner, we settled on fruit.

Fruit….and some vanilla cupcakes with buttercream icing. I made these larger sized cupcakes when I was making the ones for DS to take to school.

The little ones looked like this:

Morning Ladies,

Brandi ~ You just made me laugh. Oh sweetie bless your heart. All 3 of my kids have done P90X and Insanity. They love it!! I really think they are a bit deranged. Doug tried it with Stephanie about 3 months ago - I watched from my comfy chair - and he lasted about 15 minutes. There is no way I am trying it. No WAY!! Bless your heart for trying and sticking with it. I am in awe!!

Nan ~ I am so glad you had a good weekend. I have had fun following along on FB. How proud you must be!!

PIO ~ Wow, I sure wish I had been at your table. Your food porn looks amazing. I am hungry now!

Alison ~ How are you and Fran doing. I think of you often?

Merle ~ Busy weekend? Did you get any time for yourself?

I just can't believe how fast the weekends go. I was so not ready to be back at work this morning. It is a beautiful morning and I wish I was out enjoying it.

WFDT ~ Liver and onions (Doug has been begging - we both love it), boiled potatoes, steamed yellow squash and sliced tomatoes.

Make it a great day!!

So David ordered the Insanity workout of TV last month... Well It finally arrived and we decided we would start it on August 1st....

I saw someone on FB had ordered Insanity and started it. I went to Amazon and read the reviews. I was surprised to read quite a few people ended up with serious back injuries from the program. I think I will just stick to hiking. I'd rather injure my legs and hands falling a thousand times over than risk throwing out my back again. :scared:
