Crockpot and Easy Meals "Index post 372"

I made the chicken and dumplings for dinner tonight. The chicken and juice were fantastic, but I didn't like the biscuits I used for the dumplings. I used Grands and they tasted too sweet. What kind do you guys use? I love the recipe and want to try it again.

Hi. I actually use the small biscuits from aldis. I break them in half when I put them in and they taste like dumplings. I love this recipe for the winter.
 
Don't know where this recipe came from...somewhere on-line...but our family liked it and it was EASY and reheated nicely in the microwave too.

Pizza in a Pot

1 1/2 lbs. ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 can (15 ounces) tomato sauce
1 jar (14 ounces) pizza sauce
2 tablespoons tomato paste
3 cups spiral pasta, cooked & drained
2 packages (3 1/2 ounces each) sliced pepperoni
2 cups shredded part-skim mozzarella cheese

In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, pizza sauce and tomato paste.

In a 5 qt. slow cooker, layer the pasta, beef mixture, pepperoni and cheese. Cover and cook on low for 3-4 hours or until heated through.
 


This is one of our favorite chicken sandwich recipes. It also freezes well.

Savory Chicken Sandwiches

4 boneless, skinless chicken breasts
1 1/2 ounce package onion soup mix
1/4 t. garlic salt (I don't use this much.)
1/4 cup Italian salad dressing
1/4 cup water
sandwich buns
garnish: lettuce, sliced cheese (we like swiss or pepper jack), sour cream or ranch salad dressing

Place chicken in a slow cooker; sprinkle with soup mix and garlic salt. Pour dressing and water over chicken. Cover and cook on low setting for 8 to 9 hours. Remove chicken and shred with 2 forks; return to slow cooker. Serve on buns; garnish as desired.

I usually double this and put leftovers in the freezer for another time.
 
Don't know how I have missed this thread! I use my crock pot at least 4 times a week- with 4 kids, work, and sports schedules- this is the only way to make sure there is dinner on the table :)

A couple of our favorites:

Gooey Chicken Burritos

1 lb boneless, skinless Chicken Breasts
1 can Cream of Chicken Soup
1 1/2 cups grated Cheddar Cheese
1 jar Salsa
1 can mild diced green chilis (optional)
1 small onion
Burrito or Tortilla shells

Combine all ingredients (except shells) in crock pot, Cook low 8 hours.
Preheat oven to 400, Shred chicken & mix into sauce. Fill tortillas, roll and place in baking dish. Pour remaining sauce over, top with extra cheese. Bake 20 minutes... YUMMY :)



For cold winter days:
Slow Cooker Cheesy Potato Soup

1 Bag (32 oz) Frozen Diced Hashbrowns (try to thaw for an hour or so before you put in crock pot)
1/2 cup chopped onion
1 med celery stalk, chopped (optional, I leave it out)
1 32oz carten Chicken Broth
1 cup water
3 tablespoons All Purpose Flour
1 cup mile
1 8 oz bag (or 2 cups) shredded cheese
1/4 cup bacon pieces
1/4 cup green onions, sliced
1 8 oz pkg cream cheese

Mix potatos, onion, celery and water in slow cooker, cook low 6-8 hours. After 8 hours, mix flour into milk in a small bowl, stir into potato mixture. Increase slow cooker heat to high. Cover and cook 20-30 minutes (or until mixture thickens). Stir in shredded cheese and cream cheese until melted. Garnish with bacon and green onions

** You can also add cubed ham to this soup- very good!**


And another one: Because my house tends to be the gathering place for 20+ people for holidays, I had to find a recipe that was wonderful, but easy so I could focus on other things. This recipe has become a family favorite, and required at Christmas and Easter!

Slow Cooker Ham
1 6lb Bone In Ham
30 whole cloves
3 cups apple cider
1 cup brown sugar
1 cup maple syrup
2 tbs ground cinnamon
1 tbs ground nutmeg
2 tsp ground ginger
1 tsp vanilla extract
1 orange peel

Score ham and press whole cloves evenl into ham. Place ham in slow cooker, pour in apple cider until only 2" of ham is above the surface. Pack brown sugar on ham, pressing into cloves. Pour syrup on ham. Season cider with cinnamon, nutmeg, ground cloves, and vanilla. Add orange peel. (I also add a couple of sticks of cinnamon- its pretty :)) Add remaining cider to crock pots "fill line". Cover and cook on low for 8-10 hours. (I have cooked it over night before... it falls off the bone- absolutely delicious!!)

I have a crockpot by Rival. I just bought a slow cooker from Wolfegang Puck that you can also sear, saute and brown in. I wonder if it is going to cook differently that a crockpot. It does not have a ceramic insert. It is metal covered in a teflon type coating. It has high and low settings too. Just curious as to what people are using for these recipes. THANKS

I have both as well. I think the main difference is that my slow cooker cooks faster than the rival crock pot.
 
Love this thread! I have been through 15 pages so far and look forward to trying about 5-7 recipes. The only annoying thing to me is that 80% of the recipes have either some "cream of" soup or some type of seasoning or soup mix. Does anyone know of a crock pot recipe swebsite or book that has natural recipes without all the condenses soup and soup mix in it?

I made up this recipe the other night just using things I had in the freezer and it came out pretty good.

Crockpot Turkey Breast in Gravy

One turkey breast (I had one that pre-packaged that had some seasonings on it)
4 large or 6 small peeled potatoes
1 box (or 3 cans) of 99% fat free chicken broth
1/2 cup of water
1 envelope of turkey gravy mix (powder)
garlic salt & pepper to taste
1 bag of frozen mixed vegetables (carrots, green beans, peas)
salt & pepper to taste

Place turkey breast at the bottom of the crockpot
pour the box or cans of chicken broth over the top
Add 1/2 cup of water.
Cook on low heat 8 hours. About 30 minutes before serving cut/shred the turkey breast into smaller pieces. Add the bag of mixed vegetables to the crockpot, and the mix the packet of turkey gravy powder with 1/3 cup of cold water and add that, as well.

I served this over brown rice, but white rice or egg noodles would work, too.
 
Does anyone know if this is regular mustard or dry mustard???

Crock Pot Sloppy Joes
Serves 8

2 pounds ground chicken, turkey or beef
1 onion, chopped
2 cloves garlic, minced
1 cup ketchup
1/2 bell pepper, chopped
3 tablespoons Worcestershire Sauce
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons cider vinegar
1 1/2 teaspoons chili powder
Hamburger buns

1. In a heavy skillet, brown ground chicken with onion and garlic. Drain off excess fat.

2. Combine ketchup, bell pepper, Worcestershire sauce, brown sugar, mustard, vinegar, and chili powder in slow cooker. Stir in ground beef mixture. Cover and cook on low setting for 7 to 9 hours.

3. Serve spooned over hamburger buns
