Weekly Menu Planning Anyone?

New Year...time to get organized again. Anybody want to try the weekly menu planning again? I know it always helps me with ideas.

Here is for the rest of the week (in no particular order)

**potato soup with leftover ham

**hamburgers

**ham with Mac N cheese (we got a BIG ham! :rotfl: )

I'll have to think about next week. I go back to work after being off for 2.5 weeks so I need to think crock pot and quick and easy.
 
Yes! Yes! Yes! I want to PLAN!
We've been gone 21 days and I'm looking forward to being back in my kitchen :goodvibes I actually have "Braised Bar-b-q beef" on the stove right now! I had frozen stew meat and two sad onions in the crisper drawer. With jet-lag everyone gets hungry at weird times, so this will be great to just eat on a bun whenever needed!

I also just went to the store and bought $300 of groceries to re-stock our kitchen.

Bought tons of great fruit and veg! Bonus of winter in the desert, our produce is fabulous! Dead of summer not so good..but now its all so great! Even new potatoes!

Hi! I would definitely be interested in doing this. It certainly does help and with a baby on the way, I need to get more organized.

I have not figured out my week totally but this is what I am thinking:

Today: Bisquick Chicken "Pot Pie", salad

Mon: Shepherd's Pie, salad

Tues: We will be out late in the day so probably something I have in the freezer (I have some homemade chicken noodle soup and chili in there and some pizzas)

Wed: Sausage, Shells and Peas, salad and italian bread (This is a pasta dish and its one of my son's favorites...I love it too!)

That is about as far as I have gotten. I need to get to the store.

I usually cut the chicken into strips, instead of cooking whole breasts. This is sooo good! Enjoy!

Garlic Lime Chicken
Serves 6

1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
6 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chicken broth
4 tablespoons lime juice
In a bowl, mix together first 7 ingredients. Sprinkle mixture on both sides of chicken breasts.

In a skillet heat butter and olive oil together over medium high heat. Saute chicken until golden brown, about 5 minutes on each side. Turn down the heat, remove the chicken (keeping warm) and add the lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the skillet. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly coat and serve.

Sesame Beef
INGREDIENTS
1 pound round steak
4 tablespoons soy sauce
4 tablespoons white sugar
4 tablespoons vegetable oil
2 cloves garlic, minced
2 green onions, chopped
2 tablespoons sesame seeds

DIRECTIONS
Mix soy sauce, sugar, oil, garlic, and onions in a large bowl. Set aside.
Cut steak into strips and add to bowl. Cover and refrigerate overnight, or at least 30 minutes.
Cook in wok or frying pan until brown, about 5 minutes. Add sesame seeds and cook for additional 2 minutes.
(I sometimes add some cornstarch to thicken it a bit. It seems that sometimes the meat omits more water than other times.)

Chicken Spahetti
INGREDIENTS
3 skinless, boneless chicken breasts
1 (8 ounce) package spaghetti
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers (Rotel)
1 pound processed cheese food (eg. Velveeta)
salt and pepper to taste
1 pinch garlic powder

DIRECTIONS
Boil chicken in a large pot of salted water. When chicken is done, remove from pot, keeping water/broth at a boil. Shred chicken and set aside. Put spaghetti in boiling chicken broth and cook for 8 to 10 minutes, until al dente. When done, drain broth.
Return pot with cooked spaghetti to stove, put over low heat. Add shredded chicken, soup, diced tomatoes with chile peppers and cheese. Season with salt, pepper and garlic powder to taste. When cheese is melted, dinner is ready!

(I usually use left-over chicken for this. I will bake chicken breasts with salsa poured on top and then shred it and use it in different recipes. I used a jar of Ragu cheese sauce, sorta like Cheese Whiz last time and it was fine. You can use real cheese if you don't like processed cheese, but it will be string-er.

Red Enchilada Sauce
INGREDIENTS
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon minced onion
1/2 teaspoon dried oregano
2 1/2 teaspoons chili powder
1/2 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon salt
1/4 teaspoon ground cumin
1 teaspoon dried parsley
1/4 cup salsa
1 (6 ounce) can tomato sauce
1 1/2 cups water

DIRECTIONS
Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the onion, oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce.
Mix together and then stir in the water. Bring to a boil, reduce heat to low and simmer for 30-45 minutes.

This sauce is really good. I made enchiladas last night. They didn't turn out great, I didn't cook the sauce long enough. I just browned some burger stirred in some mexican seasonings, rolled that in warmed corn tortillas with shredded cheddar. I think my sauce was too runny.

Maybe someone else can help with the actual enchiladas, but this sauce is yummy.

I plan every meal for my family (we all take our lunches to work) the weekend before because we are eating a low carb diet and it's just so much easier to get the recipes, plan the week and then shop for the groceries we need and be done with it.
Before our diet we all just did whatever during the day and then at night my dh and I would either fix something quick at home or go out to eat (our grown dd isn't usually at home in the evenings, imagine that, LOL)

Snack: Cheese Stick

Dinner: Deli Chicken (made in the crockpot)

Wednesday

Breakfast: Fried egg w/Canadian bacon
Snack: Cheese Stick
Lunch: Shrimp Stuffed Eggs and salad
Snack: Protein Shake
Dinner: Roast Beef w/Mushrooms

Thursday

Breakfast: Fried egg w/Canadian bacon
Snack: Cheese Stick
Lunch: Turkey Burgers and broccoli
Snack: Protein Shake
Dinner: Corned Beef and Cabbage


Friday

Breakfast: Fried egg w/Canadian bacon
Snack: Cheese Stick
Lunch: Tuna and celery sticks
Snack: Protein Shake
Dinner: Bacon Cream Cheese Chicken Breasts

okay, awesome meal plan. How do you feel about giving away the recipe for some of your dinner idea's? I would love to have the bacon cream cheese chicken breast recipe!!!!
 
I've had a nasty cold for the last couple of weeks so my meal planning sort of went by the wayside. Getting back on track now....

I almost explained that one when I put it up the 2nd week, then decided no one would notice! You caught me!:rotfl:

The deal is... DS13 was in Malaysia last week when we had it and one of the little brothers TOLD him so now we have to have it again! Actually, it was pretty funny, I cooked lots of his favorites while he was gone, I guess I was missing him!

We like it :-) Here's the recipe. AND by the way, I didn't fry potatoes, I did mashed instead, not sure if that saved fat and calories, but it felt healthier!

Weinerschnitzel
INGREDIENTS
1 1/2 pounds veal cutlets
1/2 cup all-purpose flour
3 tablespoons grated Parmesan cheese
2 eggs
1 teaspoon minced parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch ground nutmeg
2 tablespoons milk
1 cup dry bread crumbs
6 tablespoons butter

DIRECTIONS
Place each veal cutlet between two pieces of plastic wrap, and pound with the flat side of a meat mallet until about 1/4 inch thick. Dip in flour to coat.
In a medium bowl, stir together the Parmesan cheese, eggs, parsley, salt, pepper, nutmeg and milk. Place bread crumbs on a plate. Dip each cutlet into the egg mixture, then press in the bread crumbs to coat. Place coated cutlets on a plate and refrigerate for 1 hour or overnight.
Melt butter in a large skillet over medium heat. Cook the breaded cutlets until browned on each side, about 3 minutes per side. Remove to a serving platter, and pour the pan juices over them.

Again...trying to revive this thread. I always got such good ideas from posters here...like garlic lime chicken...mmmmm

I have to work later in the evening now so I am looking for easy quick recipes and stuff I can plan ahead.

This week will be boring:

Sunday--stew in the crockpot and making lasagna today for later in the week sooooo...

I have been doing this for months and I find it saves a ton of money and time.

My Menu for the week is

Sat. - Pork chops with apple cider gravy, mashed potatoes, and glazed carrots
Sun - Spaghetti and turkey meatballs
Mon - Homemade pizza
Tues- Pot roast in the crockpot with either potatoes or noodles
Wed- Homemade Macaronia and cheese
Thur- Souvlaki with pita bread and sauted zucchini
Fri- french dip with french fries
 
Here is mine!

Sat. - Chicken Enchilada Pasta
Sun - Spiral Ham in crock pot, mashed potatoes and a veggie
Mon - Skillet Mac& Cheese...sooo yummy!
Tues- BBQ Chicken, mashed potatoes, corn
Wed- Fish Sticks...busy night!
Thur- Spaghetti with Italian Sausage
Fri- Dinner Out before football game
