I love baking when the weather starts to turn cool. I thought it would be fun to share recipes for muffins and sweet breads.

Orange Poppyseed Bread

1 1/2 cups Sugar
1 cup Vegetable OIl
3 Eggs
1 1/2 tsp. Vanilla Extract
1/2 cup Orange Juice
2 Tablespoons of Poppy Seeds
3 1/2 cups Flour
1 1/2 tsp Baking Powder
1 1/2 tsp Salt
1 cup Milk
Icing:
1/4 cup Orange Juice
1 cup Confectioner's Sugar

Preheat oven to 350. Grease and flour 2 loaf pans. In large mixing bowl, combine sugar, oil, eggs, vanilla and 1/2 cup OJ. Mix well. Stir in Poppy Seeds. In medium mixing bowl, sift together flour, baking powder, and salt. Add flour mixture and milk alternatively to sugar mixture. Mix well after each addition. Divide batter evenly between prepared pans. Bake loaves in Oven for 45 minutes or till toothpick inserted in center comes out clean. Loosen edges from sides of pans. Cool loaves in pans for 10 minutes. Turn out onto wire racks.
For icing: In small bowl, blend 1/4 cup OJ and Confectioner's Sugar. Drizzle over warm loaves.
 
Banana Bread

1/2 cup vegetable oil
1 cup sugar
2 eggs
2 cups flour
1 tsp baking soda
1/3 tsp salt
4 ripe bananas, well mashed
1 tsp vanilla

Preheat oven to 350. Grease a loaf pan. In medium mixing bowl, cream oil and sugar. Add eggs one at a time, beating well after each addition. In another bowl, sift flour, soda, and salt. Stir quickly into creamed mixture just until blended. Stir in mashed bananas and vanilla. Pour into loaf pan. Bake one hour or till center is firm. Cool 5 minutes. Turn out onto wire rack to cool completely.
 
Mini Orange Pecan Muffins

1/2 cup softened butter
1 cup sugar
2 large eggs
2 cups flour
1 tsp baking soda
1/2 tsp. salt
1 cup buttermilk
1/3 cup sour cream
1 tsp orange extract (I've substituted orange juice to taste)
1/2 cup chopped pecans

Preheat oven to 375. Spray mini-muffin pans with nonstick cooking spray. Cream butter and sugar. Stir in eggs. In a seperate bowl, sift flour, soda, and salt together. Stir into butter mixture. Stir in buttermilk, sour cream, and orange extract (or juice). Stir in pecans.
Spoon batter into muffin tins and bake 10 to 12 minutes or till muffins are golden brown. Cool on racks.
 
This is probably our favorite recipe for breakfast muffins:

ORANGE MUFFINS

1 orange
1/3 c fresh orange juice
1 egg
¼ c unsalted butter, softened
1½ c flour
¾ c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
½ c raisins or Craisins®, opt

If using raisins or Craisins®, soak first & drain before using. Grate rind from orange. Remove skin and pith and any large white pieces from orange. Cut orange into 6-8 sections, remove seeds. In blender, blend rind, orange, juice, butter & egg until soupy with butter in little bits. Toss in raisins & blend 2 - 3 seconds. Pour into mixing bowl. Sift together flour, sugar, powder, soda & salt. Combine with wet ingredients - combine only, do not mix or beat. Pour into greased muffin tins. Bake at 400 for 15 - 18 min. Yield: 12

[NOTE: I don't always have fresh oranges on hand when we want these. If omitting orange, use 1½ tsp orange rind & additional 1/3 cup orange juice.]

These are good to have with dinner.

Cinnamon-Topped Oatmeal Muffins

1 c flour
¼ c sugar
3 tsp baking powder
½ tsp salt
1 c oats
½ c raisins
3 Tbl oil
1 egg
1 c milk
2 Tbl sugar

Topping:
1 tsp cinnamon
2 tsp sugar
1 tsp melted butter

Combine ingredients; stir until moist. Sprinkle with topping. (Double topping is better!) Makes a dozen. Bake at 425 for 15 minutes in greased or papered cups.

This recipe came from Hershey's. These are okay for days when I don't feel like messing around with a totally scratch recipe.

Cinnamon Chip Muffins
Yield: 12

2 c all-purpose biscuit mix
1/3 c sugar
2 Tbl vegetable oil
1 egg, slightly beaten
1 c mini cinnamon chips
2/3 c milk

Heat oven to 400 degrees. Grease or paper-line 12 muffin cups (2 1/2").
Combine biscuit mix, sugar, oil, egg, cinnamon chips and milk in medium bowl just until moistened. Spoon batter evenly into prepared muffin cups.
Bake for 15-18 minutes or until muffin tops are browned. Cool slightly. Remove from pan. Serve warm with butter.

Deb do you think the last one would work with chocolate chips rather than cinnamon chips?
 
A good friend of my mother gave this recipe to us, so it's named after him. Although the original was for a coffee cake, I found that it makes terrific muffins! (espcially when you double the topping ;))

Clyde’s Coffee Cake

2 c flour
1½ c sugar
¼ tsp salt
¼ lb butter, melted
2 tsp baking powder
1 egg
½ c warm water
1 tsp vanilla

Combine flour, sugar, salt & butter. Reserve 1 cup for crumbs. Add baking powder, egg, water & vanilla. Mix only until moist. Pour in greased 8x8 pan. Bake at 350 for 30 minutes. Double to make 3 dozen cupcakes & check to see if they’re done after 20 min.

This is my SIL's recipe & it's really good. DH loves pumpkin & it's his favorite.

Pumpkin Bread

4 eggs, well beaten
3 c sugar
1½ tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 c oil
2 tsp baking soda
3 c flour
2/3 c water
1 c pumpkin
3 12 oz coffee cans

Grease coffee cans & preheat oven to 350 degrees. Mix eggs, sugar, salt, nutmeg, cinnamon & oil. Add baking soda to flour. Add water & flour/soda to first mixture. Mix well; then add pumpkin & stir gently until well mixed. Pour into coffee cans – about 2/3 full. Bake at 350 for 1 hour. Cool 15 min. before removing from cans. [Note: It is recommended that you mix by hand rather than using a mixer.]

This is my favorite recipe, although I'll confess I don't make it very often as it always seems like a lot of work when I do it. I think, though, that it's mostly because I make it for Christmas morning & I'm always doing a BUNCH of other things at the same time so I can have the day off on Christmas. LOL

Strawberry Banana Bread
Whispering Canyon Cafe, Wilderness Lodge

2 tsp baking soda
1 c butter
2 c sugar
1 ½ lb strawberries
2 c bananas (~6 medium)
4 eggs
1 tsp salt
3 c flour

Grease two loaf pans & preheat oven to 325. In a large mixing bowl, cream the butter & sugar. Incorporate bananas scraping sides of bowl. Add the eggs one at a time, mixing thoroughly after each. Set aside. In another bowl, mix together salt, baking soda & flour. Add flour mixture to butter mixture & stir until blended. Add strawberries (thawed). Bake 60 to 75 minutes or until a toothpick comes out clean. Cool completely on a rack before inverting onto a plate.

Yes, it does. I forgot to add that I've used them, as well as lemon chips - at different times though. ;) Really, this is an "okay" recipe. I only use it when I'm in a hurry or don't feel like making something from scratch...not that it saves more than a couple minutes. LOL There's a texture to the muffin that not everyone likes...kind of dry maybe? I love the shortcake recipe on the Jiffy/Bisquick box (we eat it warm with milk) and it's very similar to that. I guess my mouth is looking for the milk, you know? LOL

This one is much better for chocolate chips!

Chocolate Chip Cream Cheese Muffins

8 oz cream cheese, softened
¼ c butter, softened
1 egg, room temperature
½ c cream
½ tsp vanilla extract
2 c all-purpose flour
½ c sugar
3 tsp baking powder
½ tsp salt
1/3 c semi-sweet chocolate chips

Preheat oven to 400 degrees. Lightly grease 12 muffin cups or use paper liners. Beat cream cheese & butter together until fluffy. Beat in egg, cream & vanilla. Combine the flour, sugar, baking powder & salt. Stir flour mixture into cream cheese mixture until flour is moistened. Fold in chocolate chips. Spoon batter into prepared muffin cups filling them ¾ full. Bake in preheated oven until tops are golden, about 20 minutes. Yield: 12 muffins
 
I love baking as well! Nothing fancy just muffins, cupcakes, and scones. Some day I'll learn how to make pastrys.

Anyways here is a great! Pumpkin and Honey Muffin recipe and Banana and White Chocolate Chip Muffins

Pumpkin and Honey Muffins

1/4 cup of butter or to make it healthier use 3 Tablespoons of Olive Oil
3/4 cup of Honey
1 Egg (I use Vegetarian Fed Cage Free Eggs)
1 Cup of Fresh Pumpkin or Canned
1 1/2 cup of all-purpose flour (Organic or Whole Wheat would be better if you can find it!)
1 1/2 teaspoon of baking powder
1 teaspoon of baking soda
1/4 teaspoon of salt
1 cut chopped toast pecans or almonds.

Pre Heat the oven to 350 F.

In a mixer beat butter until light. If your using Olive Oil skip that and jump right into adding the honey and then beating in the egg and pumpkin.

In a different bowl mix all the dry ingredients. Then add butter/Olive Oil mixture. Stir in pecans or almonds. Put into your pre greased cup cake pan or use cup cake cups so you don't have to grease your pan. Then bake at 35o for 25 to 30 minutes. Let cool on a wire rack.

Banana White Chocolate Chip Muffins

2 cups all purpose flour (Organic is better)
2/4 a cup of sugar (Super Rifined or Organic is better. The Bananas make it sweet already so you can put even less sugar in there!)
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 Cup of mashed up Bananas (It's about two regular sized Bananas of course I would recommend Organic ones!)
1/2 cup of butter melted of 2 Tablesppons of Olive Oil
2 Eggs
1/3 cup of buttermilk. (If you don't have it on hand make it yourself! 1/3 of milk and 1 tablesoon of vinegar or lemon juice)
1 1/2 teaspoons of vanilla
1 cup White Chocolate Chips


Pre heat over to 375 F. Prepare your baking tray with cup cake cups or grease it.

Combine all dry ingredients.

Add mashed up bananas, butter/OO, eggs, buttermilk, and vanilla. Mix well then ad to dry ingredients. Mix very well! Then fold in White Chocolate Chips. Put in on your baking tray and bake for 20 minutes. Remove and put on cooling rack.

I have also tested this kind of food,but don't have the recipe of any one.I have heard just only name of some food items like:Gluten Free Sweet Corn Bread,Sweet Bread and Sweet Corn Muffins
