I'm interested in these - I keep buying zucchini and getting tired of just grilling or steaming it. Have you made them before?



Dad is still here, just hanging out, and granddad may be moved out of ICU and into a regular room later today. I need to go by and see him today. Thanks for all the prayers.

Well what would a weekend be without another trip to the ER?

This weekend it wasn't me it was Mom. The cortisone pack they had her on gave her some very serious side effects to the point she was in cat scan 3am to make sure there was no sign of stroke. She came down with pain behind her eye and her blood pressure sky rocketed. Thank God she is back home and it seems we dodged a bullet.
The horrible thing is the cortisone gave her back the most relief that she has had in 5 weeks so we are back to square one.

Hope everyone is doing well & enjoying the weekend.

Maria, thank God she's allright, but it has to be so frustrating to be back at square one. I'll pray that some other form of relief will be found.:hug:

Aimee- I am so sorry, for some reason I thought your Grandmother was sick. I apologize. Good news that your Granddad is moving ut of the ICU.

Debbie made such a nice meal. She started with sundried tomato feta and some yummy triscuits, a chicken, garlic and feta (I think) stromboli, chicken and steak kabobs, tomato feta and onion salad adn a delicious fruit salad. She served a point friendly chocolate cream pie for dessert. I brought the lemon blueberry cake which was so ggod as well.

1 Lemon cake mix
10 oz diet mountain dew or lemon lime soda
2 egg whites
blueberries

mix all together and bake 350 for about 30 minutes.

I used 2 cups fresh blueberries. They sank to the bottom and made the cake taste a lot like the blueberry pudding/dump cake we all love but cannot have. Kind of like a blueberry pudding cake

We ended up at Logan's for steak. Yum.

Granddad is still not stable and it's not looking good right now. They can't figure out why they can't get his blood sugar stable. It'll jump from 40 to 400 without a clear reason. He's still in ICU. My aunt told me they were going to ask my mom about coming home but she simply can't afford to do that. I'll talk to her tonight and see what the conversation was.

Glynis-- that's wonderful, what a lucky boy to be born into your family (I secretly wish you were my mother too) I am in awe of all you do for your family and the wonderful community you have.

The zucchini parmesan crisps were really good, that coming from someone who hasn't had anything fried in over a month. Johnny said they were good too!

Also the artichoke salsa on the grilled tuna was excellent, I know Lori posted it but I can't find it. I'd be happy to post it again if anyone is interested in a bold flavored low cal/fat salsa.:goodvibes

Lindsay - Becky had some good suggestions about linking this thread with the new one, please let me know if you're going to do it or if I am.

Aimee - I'm sorry to hear that your grandfather isn't doing well again, continued prayers my friend.:hug:

About our trip to WDW, well I'm calling it a family reunion - there will be 10 of us in all! :eek:

It will be dh and myself meeting up with my mom, my brother & sil, sil's sister and her 2 kids, and her girlfriend and 1 kid. They are all from NOLA and will be flying there - dh and I are driving up. We are all staying at POP Century. Should be interesting. :rotfl:

Today we are eating light. We kind of pigged out yesterday. We will probably have something grilled cheese and tomato soup.

- The Cheesecake Factory we went to was in Perimiter Mall. It's such a cool place, and they have a Bare Escentuals boutique. It was like the Mother Ship was calling me home!!! (sorry, I didn't "quick quote" who asked me this!)

I will leave this entirely up to you. I don't mind taking it over again and I don't mind if you want to do it. The board I moderate gets little to no traffic and takes me literally 5 minutes of work per day, if that. So whatever you want to do is fine. I appreciate all you've done :hug:
 
I thought I heard the Cheesecake factory was having trouble. I glad to hear it is still around. I like their Cheesecake. It is not the best I've had but good none the less.

Today we are going to finally see WALL-E with some of my Chicago friends. It should be fun, some of them I've not seen in a while. So we are eating out today.

Last nights flank steak was good. I used Tastefully simples morrocan spice on it. I have to get more of that stuff :lovestruc It is great on hamburgers too. Ok enough I sound like a commercial.

Kathy I really like Ellie. I asked cause some recipes don't turn out well from me. I have trouble with Rachel Rays recipes. I've made a few of Paula's and Tyler Florence's and Emeril with success. Ellie has a Halibut recipe that sounds really good. I love halibut.

Ok I have to eat something and get showered and shaved.
 
We are having a lazy relaxing day today. Rain, rain , more rain.

WFD- leftovers... ribs, corn bread, corn cob, and salad.

Ann, We had horrible storms during the night. It was petty scary actually...every few seconds the lightening would light up the sky. That went on for over an hour. I never remember it being that bad.

We are having cheesebugers, grilled corn and some mac and potato salads tonight. I have not been into cooking this summer...:confused3

WFD - Tuna steaks with an artichoke salsa. I believe Lori(The Bead Pirate) had posted the recipe for the salsa a while back. Also making Ellie Krieger's zucchini parmesan crisps.
How was it? I haven't made that in awhile......hmm, maybe we'll do that for dinner tonight!:laughing:

Rick and I have found this little Kroger down the street from the hotel we "reside" in up near Detroit. Kinda a suburban to rural area (if we ever move it'll be to this kind of area). Anyway.... as things get along in age they mark them as manager's specials which are at least 50% off. Last night we went and stocked up for the week! Steam bags of organic sweet potato "fingers" $1.49, organic haricot verts $1.29, sliced mushrooms and sliced baby portabellas 99cents a tray, organic washed romaine (big plastic tub)$1.99, garlic rosemary salmon filet $1.84, sweet bourbon glazed salmon filet $2.24. Boneless pork ribs $1.87! And cheap-o wine- a white merlot and white zin 2/$7!

We spent less than $50 and will have more than enough food for the week. We'll prolly be finding homes for some of it when we check out!:lmao:

Now why can't I find deals like this when I'm at home?!?:headache:
 
Good morning! I can't respond like I would like to, but I need to ask all of you something. I have had increasing pain in my right arm, which is now pretty much centered in the area of my elbow. The pain is really severe and nothing has helped it. Yesterday, not only did I have the pain, but the tip of my right index finger was numb. Today, my entire index finger is numb down into my palm. The circulation appears fine, but I was wondering if any of you have an idea of what this is and if it will go away by itself.

I'd get it checked out as soon as you can Gretchen. I've had recurring numbness issues with both of my hands for years, old age. But never with pain.:hug:

You are going to have so much fun! I have been after my sister to come with us to Disney and she has not really wanted to. Well after Debbie told her how much she wished she had been with us on our girls trip she reserves a condo next September. September????????? There is no way any of us can go then, I am so sad and jealous of you and your trip.

Gretchen- you need to get this checked. I get numbness in my arm but that is from a pinched nerve. It travels from my neck all the way down to my fingers and is very painful at times. Your pain sounds different.

Buddy is at the farm today so I will see what is at the market for dinner. Somehow my house exploded this weekend. I told DH that if anyone stopped in it would look like he was married to Peggy Bundy. Well he laughed and said that was okay with him ;) right up until I reminded him that Peggy sits on the couch all day eating Bon Bons, does not cook or clean and shops til she drops.:lmao::lmao:I left him slumped over a tractor trying to decide if spandex and big hair was worth it :rotfl::rotfl::rotfl:I have to be back in 45 minutes so we'll see who wins...his stomach and his head or the rest of him :rotfl2::rotfl2::rotfl2:
