    Crabmeat-Corn Soup

    ¾ c. red onion chopped
    ¾ c celery
½ c. green (or red) pepper chopped
    1 ½ clove garlic minced
    1 ½ tsp Worcestershire sauce
    ¼ tsp salt
    ¼ tsp thyme
    Dash pepper
    2/3 c. chicken broth – low fat
    1 cup frozen corn
10 oz can diced tomatoes – with green chiles
    2 c water
    4 oz imitation crab meat

Spray Dutch oven with nonstick cooking spray. Over medium heat add onion, celery, pepper, and garlic. Sauté 5 mins. Add Worcestershire sauce and next 7 ingredients, bring to a boil. Reduce heat and simmer ½ hour. Stir in crab meat and cook over medium heat 15 mins.

144 calories – 1.5 g fat – 3.2 g fiber -- According to website it’s 3 pts per serving and serves 4. My batch contained 6 cups so that’s 1 ¼ cup per serving. I adjusted some measurements that were in poundage instead of cups, so hopefully it’s still accurate. If anyone verifies on-line at WW please let me know if it’s different.

I sprinkled Old Bay seasonings over top just before serving.

(I’m sure those who can get real crab it would be even better!)
