Hi,
I think you'd be happy with either option, but I can give you some first hand advice regarding the Princess cruise as we did this in November 2018.
We left out of Los Angeles and had a few days at Disneyland before the cruise.
For our day in Honolulu, we scheduled a private tour (not through the ship) and were able to pick all of the places we wanted to visit, which included Aulani. We spent about 1 1/2 hours there, mostly for shopping and to tour the hotel area. It was definitely a tease but loved visiting.
As far as the cruise itself, if you are ok with the sea days (which we do), then you will love this cruise. They provided enrichment activities including lei making, ukulele lessons, hula lessons, and when in port, they had locals come on for performances. In Honolulu they had hula dancers (adult and children) that put on an amazing show for us.
It was one of my favorite cruises I've taken.
I understand that with the sea days, and few actual days spent in Hawaii, the itinerary is not for everyone, but I would definitely recommend it.
As far as Ensenada is concerned, don't waste your time. It was a run down and had a with a loooooong line to get back on board.
All that being said, I am also a huge Disney fan so wouldn't hesitate to go with your second itinerary either.
Either way I hope you and your Mom have a fabulous time when you finally get to go on your trip.
