We just ate at Teppan Edo a couple weeks ago for the first time. I've never used chopsticks before. We didn't even have to ask for forks - they simply gave the entire table a setting at the beginning of the meal, and also offered chopsticks. I was sitting next to a child who belonged to the other family sharing our table, and the hostess offered him "cheaters". I asked her if she would make them for me too, and she was more than happy to do it. I was really glad I did, because I was able to eat a little bit with the chopsticks (which I wouldn't have even attempted without the cheaters) and the rest of it with my fork - it was a fun experience!
Don't worry about them providing forks, but you should definitely ask for cheaters if you don't think you can figure out chopsticks - have fun!!
