If you are looking for a restaurant to view Wishes from, you'll need to leave MK. The two best choices are California Grill and 'Ohana. Good luck getting a ressie - usually for ressies about 1 - 2 hours before Wishes begins you'd need to make an ADR close to the 180 day mark.

Just a note that the restaurants listed are outside the MK at resorts. There is no restaurant in the MK to watch the fireworks without stepping outside to view.

We ate at Ohana about 5:45 and our table would have been perfect for viewing Wishes, the CM said if you want to watch from the restraunt book about 8pm reservation (on nights when wishes is at 9pm) so I guess 1 hour before the actual fireworks. But of course I'm sure it's luck of the draw who gets what table for those times.
