My DD11 would love to sleep in the bunk, however we are a family of 3. So, would the steward make up the bunk instead of the couch? If yes, do we just ask them to do that?
Actually your room may not have an upper bunk. If you are in a room designated for 3 it wont have an upper berth. They are not going to assign 3 people to a 4 people room because they will need that room for a family or group of 4. Your room may have an upper bunk but I high doubt it. Sorry
We booked cabin 7035 and it does have an upper bunk. Disney Cruise Line went ahead and let us have that cabin when we booked in October, and they knew we were a family of 3, but we were not aware it was a room for four until I got on the Disboards and inquired about the room we booked.
Good point Donald's Best Pal, but sounds like they've got that handled.
Only other issue would be your child's weight, which I doubt will be a problem at age 11. There is a 200 pound weight limit on the pull down bed. The same weight limit applied on our HAL cruise, but both kids were under the limit then in mid-2002. But by the time our DCL NYE Cruise 2003-2004 hit, DS was 6'2" and 210 pounds, so DD got the pullout bed by default.
Our DS is only 11 but she is very tall for her age, and loves basketball. She is 5'5", and 115lbs. Thank you for the size information, that was going to be my next question. Everyone on this board is so wonderful!

My dd age 11 is about that height and was fine in the bunk. We had a cat 11 with and it was easier to have our luggage on the couch and her sleep in the bunk. (We had my infant nephew with us and therefore had lots of "stuff".)
