You are losing 1 hour per day at AK, Epcots hours seem to stay the same no matter what time of year (FW 9am-7pm though major rides are open til 9pm, WS 11am-9pm), MGM figure 2-3 per day (first week of August they close at 10, December I think they close at 8 but not positive), and MK you will feel like you are losing the most 2-3 hours but you could do MVMCP(buy tickets early for savings) On MVMCP days MK will close at 6pm.
Considering how less the wait times are per ride, my opinion you are actually gaining hours. When we were there the week following Thanksgiving we rode
Spl Mn 2 times (Walk on)
BTMR 2 times (1 was a fastpass)
HM 1 time (just missed walking on, ok we like looking at the cemetery)Carousel 1 time (just missed walking on)
Dumbo 1 time (10 min wait)
Philharmagic 1 time (FP)
Teacups 1 time (5 min wait)
Indy 1 time (10 wait)
Stitch 1 time
Space Mn 3 times (1 was a FP)
TTA 1 time
Buzz 1 time
COP 1 time
all within 4 hours. Thats something you will never do during July. Plus my thoughts if you have to stand in line I'd rather do it when its 75 degrees out with a low humidity, instead of 95 degrees, feeling like 104 degrees and 85% humidity.

Oh plus seeing Main Street all done up for Christmas. Its absolutely beautiful!

December gets my vote. Cooler weather, smaller crowds, all those beautiful decorations.
