Which restaurants require ADR?

Me and my husband will be visiting WDW december 2nd till december 14. We're not completely sure yet where we want to eat on which days. We'd prefer having a bit more freedom and not be stuck to 'this day, this time, this place' every day.
Therefor we want to have a mix between reservations and non reservations (or getting reservation a few hours in advance). Is that doable? Which of the following restaurants you think could be same day reservation or walk in and which need to be booked far in advance!

Places we, so far, seem to be interested in (we dont need to eat at all of them):

Sanaa
Garden grill -
Interested in breakfast only
Via Napoli - Prob needs ADR months ahead?
Tusker house
Ohana -
I guess needs ADR months ahead?
Yak & Yeti
California Grill -
Will make reservations here to watch MVMCP fireworks, they will have the sound right?
Skippers Canteen - Doesnt do ADR?
Trails end - Will book this as we have a Fort Wilderness day planned
Sci-fi dine in
Be our guest -
Aware this place needs ADR as early as possible (would like to know their changed menu fist)
Il Mulino
Kona Cafe

How are the places in Disney Springs, I assume if you dont have a MUST do place there will always be several options?

Every TS restaurant with maybe one exception, are going to require an ADR. We never make our ADRs in advance, we just make them while walking around the park for that night and have never had a problem finding anywhere to eat. I would say BOG is going to require ADRs be made in advance, the odds of getting those same day will be difficult. We have walked up to Skipper's Canteen and been able to get a seat about a half hour later but that was early in the day and for lunch. We have also walked up to Sci Fi and gotten seated for lunch. We got there before it actually opened up and were able to put out name on a wait list. From what I understand all the wait list for it is in the back at the tables and not in the cars but since there were three of us that worked out well.

You have a lot of popular choices on your list. Most of them will require an ADR and several of them need to be made right at 180 days, specifically BOG, Ohana, TH, and probably GG. You may have some walk-up success at Yak & Yeti, Skipper Canteen, and Sci Fi. My advice would be prioritize the ones you absolutely HAVE to eat at and make ADRs for those. The rest you may have success booking an ADR the night before, or even the day of. Walk-ups tend to be the most difficult but it can never hurt to try.

I will prob make reservations day before or as early as I know. And ofcourse the 180 days in advance for our must do's. How are the restaurants at the resorts such as Sanaa and Kona? Or Il mulino even. Anyone knows if these are often fully booked as well?

Kona is not a place I'd walk up. All the people who can't get 'Ohana book there, and all the people who try to walk up at 'Ohana walk up there.

I'd say Sanaa at normal meal hours needs advance booking. You may be able to get day-of if lucky.

Anyone knows if im forced to buy drinks at the restaurants or if I can drink out of my own water bottle and/or resort mug?
