Which parts of parks are open for EE hour?

We will be down at WDW for 3 1/2 days the week before Easter and I am planning to do EE for AK and MGM.

Which parts of those parks will be open for that first hour? It used to be just specific rides or sections, is that still true, or is it all open now?

We have never really utilized EE before, but I think it is the only way we will see anything this time.

Thanks for your help.
