Which parks are 2 day parks when solo?

My "I get to play at wdw solo while my husband has to attend his convention" trip 3 weeks away. After is said & done, I have a 6-day, 1 park a day, plus a water park or other, pass. I'll be arriving in Orlando around 11am. So, I'll be able to start my stay by early that afternoon.

Which parks do you think would be best for seeing over 2 days? The only things that are close to being set in stone is... 1- MK on Tuesday. That will be a full day plus special private event. 2- Thursday will be at EP for Eat to the Beat.

At 1 park a day, I'll still have 2 days to double up my fun. Which parts so you think those 2 extra data would be best with a solo?

I always want an extra day at Animal Kingdom. Reasons being 1) I can't seem to be able to see all the entertainment I want to see in one day, and 2) I love Animal Kingdom at night, and I always want to do everything a second time in the evening.

EPCOT would probably be my second choice for going to a second day, for much the same reasons as above.

Both also have some great food choices and lounges, enough to capture interest for more than a couple of days, so there's comfortable places to relax by yourself.
