Which Eastern excursions fill up fast?

It's almost time to book our excursions and I wanted to know how soon I need to do it. Do some of the more popular ones fill up quickly? Which ones should I book immediately? TIA

Any special excursions on CC. The parasailing inparticular fills up very quickly.

I can't believe that tomorrow is our 60 day mark. Yippppeeee!!!

The dolphin swim usually books up quickly. We missed out on our first cruise and made sure we got the reservation for the second cruise.
