During our trip in May, the park opens at the same time both days (9 AM) so Magic Morning would be at 8. We have 3 day hoppers, Thursday-Saturday and it's just the 2 of us and we don't care if we get on the Fantasyland rides this trip. Would it be better to skip MM and go to CA those mornings?
Which day for Magic Morning? Thursday or Saturday?

That really depends on your preferences. Since Fantasyland isn't on your must do list, it could be skippable. I will say that MM at DL will be at 8, but DCA won't open until 9, so that is one less hour in the parks. If I was to do one I would choose Thursday.
