Where to stay for impromptu trip in October?

So we ended up getting spots in the annual passholder after hours event in October and if I can get the time off approved at work we will go up for a quick trip. We weren't planning on this, we'll be back two weeks later for our Disney wedding. I'm trying to figure out where we should stay. I need a hotel that can allow flexible cancellation, because I might not get the time off approved and we are also waiting to find out about something else that is happening around then and could potentially overlap and we wouldn't be able to go.

I found some availability at Disney Springs hotels, these are the cheapest option. Question though for fast passes. Will we run into issues about getting more than 7 days of FP with our annual passes. We have the stay for our wedding and NYE, both onsite. I know Disney Springs hotels get the 60 day advantage, but are they considered an onsite stay so it won't give me grief having more than 7 days? Or is it considered offsite and then I wouldn't be able to have the fast passes?

Currently at Disney these hotels are available, but these seem to fluctuate every time I look at them. There aren't any for an Epcot hotel, but that would be most ideal. Should I hold out to see if an Epcot hotel becomes available?
Grand Floridian, Port Orleans Riverside, Bay Lake Tower, Animal Kingdom, Caribbean, Old Key West, Coronado and Saratoga. There are some values available, but we normally stay Deluxe so won't stay there.

Well, yeah. If think, rather than "seem to" fluctuate, availability actually fluctuates. Other people are booking, cancelling, changing reservations while, and between when you, search.

The Swan and Dolphin are around the same price as the Disney hotels, with the cost being similar I'd chose Disney over them.

I would choose Disney too all the time over the Swan/Dolphin. We recently stayed at the Boardwalk - 12 of us. One decided to come down a day earlier and one two days earlier. Boardwalk of course was all booked up where we were all staying. Cash rate - don't recall but we know over $400 - give or take for studio. Each of my sons booked the Swan for $200 a night. I thought it was reasonable, close to Boardwalk where they were staying for the week/easy move.
