When to book excursions????

I know I must have read this before but I cannot find it. Can someone tell me when the earliest is that I can book an excursion?

You can start booking shore excursions 60 days prior to your cruise departure date.

I sent an email requesting a certain excursion. How do I confirm I am signed up? I sent the email about 2 weeks ago and received no email confirmation. The email went to the address given on the dcl site for requesting excursions.
