When should I go?

Last year my girls and I went for Halloween and thoroughly enjoyed every aspect. Weather, crowds weren't horrible, etc.

I want to start planning a trip for next year. But now I have to work around my daughter's college schedule. So I could do the last week of May, the week before Christmas, or sometime in the first 3 weeks of January.

What is least crowded? Best weather? Etc.

Why stress yourself out trying to decide? Just book all three time slots - statistically you'll have a great time at all of them!

I vote week before Christmas because decorations are beautiful and you could catch a party at MK!

Crowds will be the worst at Christmas. It's the busiest two weeks of the year at WDW.
End of May is hot. I live here and can tell you to expect temps in the low 90's. Humidity is creeping in pretty good by then too. I would say it's similar to northeastern July. Summer T-storms haven't really kicked in yet so it's really hot.
Jan is my personal favorite time to go. Moderate crowds (there really is no "off" season anymore) and the weather is usually very nice. Think early March up north. That being said, it can be unpredictable with cold. Usually high 60's/low 70's day but 40's/50's at night. You won't catch the locals swimming but it's nice to roam the parks.
MLK weekend - stay away. LOL It's not horrible but it is more crowded than normal. You should also check the marathon dates. This is marathon season at WDW and you should know when they are when planning.

Out of all the dates you've listed, I'd go with January. The weather is usually cool, and the parks aren't super crowded if you avoid the weekends mentioned above. Enjoy your trip!
