you can look at some of the Disney sites to get an idea of what days have EMH for each park. Understand that they may and so far this year, have frequently changed. The EMH in the evening seem to stay about the same, but opening hours for the parks have varied greatly. All you can do is work on your best guess, based on what is currently available.
In general, if you are not booking a breakfast ADR, a change in EMH doesn't mess up your ADR schedule. Its when you have a breakfast scheduled and then they move thepark opening to an hour earlier that things get messy.

Just know that these preliminary hours can and probably will change, especially at MK. Last year, MK opened at 8:00 every day, so early EMH began at 7:00 a.m. that week.
Always a good chance, which is why using the Touring Plans historical calendar is important. However, this will allow OP to see the Disney hours posted when the 180 opens.
The best way is to look at historical EMHs or look at the weeks that have hours and EMHs already posted. The days for EMHs won't change much from past years. The exception will probably be DHS which if they have expanded hours for the first few months after the New Toy Story Land opens. What we did was book reservations after park opening expecting expanded hours for DHS. Other parks will be pretty consistent with years past.
We leave in just about a month and I had an 8am reservation for BOG - the posted opening time for MK that day, for months, was 9am. Last week they changed it to 8am (not EMH), so I cancelled BOG. Make your reservations, but just know that park hours could change at any time.
Make your reservations based upon the past pattern but know it might/will change. Fortunately you can cancel and change your dinning plans. Like in our case the AK EMH messed with my 8 am tusker house reservation. So I canceled it, but kept checking for something to open up later in the morning and it did. Buy don't cancel the hardest to get reservations like in the castle or Be Our Guest and think you can get another time. I am sure there are other once you get you make it work reservations but those where our 2
