When can you make dining resv.

Hello all. Staying on disney property in Sept. Not doing any Genie, lightning lane, etc. Want to wing it and not let the mouse have any control over us and have to be on our phones the whole time. When can we make dining reservations? We just want to make a couple going the week after Labor Day during the week. Thanks

I often see it mentioned on here where closer to the day of your planned meal you can often find a previously 'sold out' location suddenly become available. I would assume people make reservations way ahead of time and then the day prior finally decide where they want to eat and cancel something they no longer want to avoid a no-show charge.
