We are new, closing on AKV in a couple of days and will receive our points on Dec. 1st. Can we book for next year (may) once we close or do we have to wait until Dec when we officially get our points?

You need points to book a reservation.

Once you close and DVC has you in the system you will be able to book a reservation for anytime after Dec. 1st up to 11 months out if you book at your home resort of AKV or up to 7 months out for all others. You do not have to wait until Dec. to make the reservation - the reservation just has to be for something after Dec. 1st.

Since you purchased directly from Disney you can book immediately. You do not have to wait until you close. They put you in the system within a day or so of when you paid your deposit and that's all that is required for you to begin making reservations.

Your Dec 2008 points are already in your account. They are valid for stays from Dec 1, 2008 through Nov 30, 2009. A trip in May 2009 falls within your Dec 2008 UY so you can call MS immediately and book your May 2009 trip using those Dec 2008 points. Your Dec 2009 points are in your account as well and are available to be borrowed into your Dec 2008 UY if you need additional points for your stay.
