TIA

Ann :earsgirl:

I'll get the russian tea cakes recipe and the chocolate crinkle recipe to you tonight or tomorrow.

4ltlTinks-

I thought our family was the only ones that called them Russian Tea Cakes. Whenever I mention them, people just stare at me. When I explain them, they say - oh you mean adventure balls or wedding cakes or snowball cookies or pecan balls....I have never had anyone call the Russian Tea Cakes...maybe be a german decent thing as the recipe comes from my mom's side which is 100% german heritage :confused3 Not sure, but they are only made at Christmas time.

Every Christmas I make the same old stuff so I'm glad to see this thread. Below are my favorite Christmas goodies. Even though I make the same things all the time, they are requested by several different friends/family so I guess they're pretty good. Here's my list....
Banana Nut Bread
Chocolate Chip Cookies
Chess Squares
7 Layer Bars
Chocolate Crackles
Fudge
Marbled Brownies

The Choclate Crackles are my favorite so I'll share that recipe:

4 Squares unsweetend chocolate squares
1/2 C salad oil
2 C sugar
4 eggs
2 tsp vanilla
2 C self-rising flour
1 C chopped nuts (optional)
Confectioners sugar
Melt chocolate in heavy saucepan. Blend in oil and sugar mixing well. Add eggs one at a time mixing well after each one. In a large mixing bowl pour in the clocolate, oil and sugar mixiture then add the flour and vanilla. Mix in nuts if desired. Let stand at least 7 hrs or overnight in refrigerator. Next day
preheat oven to 350. Lightly grease a cookie sheet. Sprinkle confectioner's sugar in a bowl or pie plate. Spoon a small amount of the chocolate mixture into the palm of your hand and roll into small balls. Then roll into confectioners sugar and lay onto cookie sheet. Do NOT press onto cookie sheet. Cook 5 to 7 mins. DO NOT OVERBAKE!

Try them and let me know what you think!

Karen :cheer2:

Cherio,

I have German in me too...must be why we call them that, huh?

I didn't realize until your post that the wedding cakes recipe already mentioned is probably the same thing. It will be interesting to compare the two recipes when my mom gets ours to me.

I'm thinking I should finally manage to get all the holiday recipes in a little cookbook for myself! I'm a grown woman with 4 children and I still call her every year for a few of the recipes!

For those of you waiting for the recipes...I'm just waiting to get them from my mom! I'll post as soon she gets them to me.

Karen,

Have you ever tried making these with all-purpose flour, and if you did, how much baking soda/baking powder did you add?

Pat

Here are the recipes for Chocolate Crinkles and Russian Tea Cakes...

Chocolate Crinkles

Mix together:
½ cup vegetable oil
¾ cup cocoa
2 cups sugar

Add and blend until well mixed:
4 eggs (1 at a time)
2 tsp. vanilla

Stir in:
2 cups flour
2 tsp. baking powder
1/2 tsp. salt

Set aside:
1 cup powdered sugar

Chill mixture for several hours or overnight. Roll dough into 1/2-3/4 inch balls. Drop into the powdered sugar. Roll until well covered with sugar. Place 2" apart on greased baking sheet. Bake 8-10 minutes in 350 oven. Be careful not to over bake. Makes 3-4 dozen cookies.

Russian Tea Cakes

1 cup butter or margarine
1/2 cup powdered sugar
1 tsp. vanilla
2 1/4 cups sifted flour
1/4 tsp. salt
3/4 cup finely chopped nuts (pecans)

Mix butter, sugar, and vanilla thoroughly. Stir flour and salt together; blend in nuts. Chill dough.

Heat oven to 400. Roll dough in 1" balls. Place on ungreased baking sheet. These cookies do not spread, so they can be placed fairly close. Bake 10-12 minutes or until set but not brown. While still warm, roll in powdered sugar. Cool. Roll in sugar again. Makes about 4 dozen 1" cookies.

I am loving these recipies! Anyone have any more? I just got a new stove (early Christmas present) and I am loving baking in it!!!
