What's your favorite non-park activities and attractions at Walt Disney World?

We really enjoyed La Nouba at DTD, and you might consider renting a boat for a couple hours.
 
We really enjoy an evening touring the monorail/Seven Seas/Bay Lake resorts. Board the monorail and take it around all the resorts, stopping at each. They all have at least one lounge to enjoy a cocktail or snack at. Hop on a boat and head to WL. All of the resorts are fascinating. Check the schedule for the Electrical Water Pageant and view it from one of the beaches.
MK fireworks cap off the evening. Magical.
 
I do try to get to the miniature golf courses during each trip. They're fun! I prefer Fantasia Gardens to Winter Summerland.
 
The miniature golf courses are a great deal of fun and the theming is great in all of them. There are lots of hidden mickeys to find, too, which we love. :earboy2:
Resort hopping and visiting the hotels is loads of fun - and you can take a horse carriage ride at POR or splurge for a afternoon tea at the GF.

I second the mini golf... we had a blast doing this!

The Monorail Cocktail Tour is absolutely spectacular, ending with dinner or drinks at California Grill to watch the fireworks. We also enjoy doing an evening at the Boardwalk - a surrey bike ride around the lake, ice cream at Beaches & Cream, a drink at the Belle Vue Lounge and cap it off with the annual karaoke throwdown at Kimono's at The Swan.
