What's with these hours?

Just called WDW to make some priority seatings for our March trip. We have two days planned at the MK and I wanted dinners for each of those nights. Made 4pm for Crystal Palace -- no problem. But when I tried to make one later for the next night at the Liberty Tree Tavern -- around 6pm -- the cm said they only serve dinner til 5:45. Huh? I told her the calendar says the park is open until 11pm that night! She checked and came back and told me that the food places are not ALWAYS open late even when the park is.

Two major restaurants shut down dinner at 5:45 on nights when the park is open until 10pm and 11pm? Does that sound right?

I also could find no schedule for fireworks/parades on these dates, even though park hours do appear on the WDW website. How can we plan ahead with shananigans like this?

I know. I just made our ressies for 5/5/04 and asked for 6:30pm and was told the same thing. I asked if he was sure? 5:45 the latest? Well I took the 5:45 anyway. I was hoping to walk out and get a spot for the parade if it happens. Anybody eaten there lately? What was your time frame? Thanks!
