What's on the menu for tomorrow?? (Include recipes if you can!)

I'm trying to find something yummy to make... what does everyone have going on?
 
I think we are going to grill steaks, have baked potatoes, a salad of some kind and maybe corn on the cob. I don't know that we are doing anything specific for tomorrow other then golfing.
 
I'm going to work on a fusion dish, mixing Indian and Italian cuisine: I'm going to make Saag Mozzarella.

Bunch of spinach
1 yellow onion
2 tbsp fresh ground ginger
3 tbsp olive oil
2 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 pound mozzarella
1/2 c plain yogurt
1 pint cherry tomatoes, halved
2 tsp salt
1 tsp black pepper

1) Blend chopped onion, garlic and ginger along with spinach in a food processor. Add a pinch of salt and pepper and puree until a smooth paste forms. Set aside.

2) Heat oil in a saute pan and add onion, spinach and chopped tomatoes. Saute until fragrant, then add the yogurt and spices. Sprinkle with S & P and saute about 2 minutes more.

3) Add cheese to the mix–if using mozzarella instead of real paneer, add just before serving, as the mozzarella easily melts throughout.

4) Sprinkle with herbs. (My wife and I are arguing about whether to use parsley [her choice] or basil [my choice].)
 
I'll be making this at some point:

Marinated Flank Steak

Ingredients

1/3 cup reduced sodium soy sauce
1/3 cup packed brown sugar
1/4 cup sliced scallion, white and green parts
1 tablespoon sesame oil
1 tablespoon sesame seed
2 teaspoons garlic, minced
1-1 1/2 teaspoon gingerroot, minced
1/4 teaspoon chili pepper flakes (optional)
2 lbs flank steak

Directions

1.Mix together all ingredients except steak together in a bowl. Fold steak into thirds, placing outer edges towards the center. Place steak into a resealable freezer bag. Add marinade and squish around so that all of the steak surface is covered. Place into a second bag, seal and label.
2.Freeze steak for up to 2 month. To prepare, remove 2 days ahead and defrost in the fridge.
3.To prepare, pre-heat grill or broiler. Remove steak from bag and pour sauce into a small sauce pan. Bring sauce to a boil and simmer for 5 minutes.
4.Grill or broil steak for 5 minutes per side or until steak reaches 135 degrees. Remove steak from heat and allow to rest for 5 minutes before slicing.
5.To serve, thinly slice steak across the grain and spoon a bit of sauce on top.
6.(if you are not preparing this as a make ahead meal, marinade meat for 2 to 4 hours before cooking.).

What You Need!
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1/4 cup creamy peanut butter
2 cups thawed COOL WHIP Whipped Topping
1 OREO Pie Crust (6 oz.)
1/4 cup hot fudge ice cream topping, warmed
Make It!

BEAT cream cheese, sugar and peanut butter in large bowl with mixer until blended. Gently stir in COOL WHIP.

SPOON into crust; drizzle with fudge topping. Swirl gently with knife.

REFRIGERATE 4 hours or until firm. Refrigerate leftovers.

Birthday cake and maybe brownies if I have enough energy ;)
 
Steaks on the grill, grilled parsley potatoes, and corn on the cob, and a salad tomorrow.

I need to bake a cake for a carry in on Tues. I may make a second one just for us!

German Chocolate Upside Down Cake

Ingredients:

1 cup flaked sweetened coconut
1 cup chopped pecans
1 package (18.25 ounces) German chocolate cake mix
8 ounces cream cheese, room temperature
1/2 cup butter or margarine, room temperature
1 pound confectioners' sugar, about 3 3/4 cups

Preparation:
Grease and flour a 9x13x2-inch baking pan. Heat oven to 350°.

Sprinkle coconut and pecans evenly over the bottom of the prepared pan. Prepare cake mix following the package directions. Pour the cake batter over the coconut and pecans. Beat together the cream cheese, butter and confectioners' sugar; drop by spoonfuls over the top of cake batter. Bake for about 45 to 50 minutes. A toothpick should come out clean when inserted into the center of the cake portion.
 
Not sure.... my mom and I have taken a step back and we are letting my father and my aunt (visiting from Miami) plan the menu..BTW Mom and I worked yesterday and mom works today and I am on call for work.. so we have other things to do... I can't wait though... I love spending time with family......

Oh my gosh, I literally just wrote down the ingredients for that!!! Not for tomorrow, but to take to work one day this week.
 
We're doing simple. Grilling some burgers, hot dogs. I'll make some pasta salad. Not sure what to do for dessert yet...
 
Actually, the Saag Mozzarella will be tomorrow. My wife made a quinoa and lentil salad for dinner.

16 oz. red lentils cooked in 4 cups water and a little salt for 45 min.
1 cup quinoa cooked in 2 cups water for 30 min
2 red bell peppers, chopped
1/2 sweet onion, minced
2 large cucumbers seeded, chopped
2 large tomatoes chopped
4 stalks celery chopped

Dressing;
1/2 cup rice vinegar
1/2 cup red wine vinegar
4 cloves galic
handful of basil
Blend above in blender, then slowly drizzle 1/4 cup olive oil

Toss dressing over lentils, quinoa and veggies. Serve chilled.
 
We are bringing an appetizer and dessert to a get together.

Shrimp Lime Ceviche


3 lbs shrimp, cleaned
2 large tomatoes, seeded and diced
12 limes, juiced
1/2 cup cilantro leaves, chopped
1 chile, seeded and finely chopped
1 cucumber, peeled and diced
1 red onion, diced
salt and pepper to taste
4 tablespoons ketchup


Cook shrimp and refrigerate.

Add lime juice and all other ingredients mix and refrigerate for 3-4 hours. Serve with tortilla chips.


I am also making a watermelon basket.
 
I'm going to eat at Bicker's house. That also sounds delicious. We can talk TV. LOL.

This is what I decided on. Not fancy, but I've had it before when others have made it and it should go well with what my family is making. Let me tell you what a pain in that patootie it is to crush pretzels! LOL. There is a similar recipe in the new Kraft magazine, but it calls for partial packages of ingredients, and that's annoying to me.


Strawberry Pretzel Dessert
INGREDIENTS

1 1/2 cups crushed pretzels
4 1/2 tablespoons white sugar
3/4 cup butter, melted
1 cup white sugar
2 (8 ounce) packages cream cheese
1 (8 ounce) container frozen whipped topping, thawed
1 (6 ounce) package strawberry flavored gelatin
2 cups boiling water
1 (16 ounce) package frozen strawberries


DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely.

2. In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.

3. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries, and stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.

I swear, some days I have brain damage. I couldn't figure out for the life of me why everyone was going to have bugers and steak. Duh!

I'm probably looking at something easy and alone since DH is a Park Ranger and will be working tomorrow night. Maybe spaghetti. Or a sandwich. Or maybe I'll fire up the BBQ for just me...

That peanut butter pie looks Ah-mazing by the by. Maybe next weekend :scratchin

I am making my beans. I made up a recipe a few months ago for my son's birthday and people still are talking about them and can't get enough! I just combined a few calico bean recipes.

4 big cans baked beans (original)
2 cans butter beans
1 - 2 medium onions chopped/sauteed
1 - 2# ground buffalo browned (you can use beef...we just happen to have like 100# of ground buffalo)
1/2 lb bacon, cooked, crumbled
few palmfulls of brown sugar
a few good squirts of ketchup
a few good squirts of a good BBQ sauce

Cook until warm in a crockpot!

I am making my beans. I made up a recipe a few months ago for my son's birthday and people still are talking about them and can't get enough! I just combined a few calico bean recipes.

1/2 lb bacon, cooked, crumbled
few palmfulls of brown sugar

a few good squirts of a good BBQ sauce

I make these w/ hot sausage, instead of beef, and also add a can of limas!

I just went to a neighbors and brought buffalo chicken dip. It all went in 20 minutes. it's always a hit and easy peasy.

Boil 2-3 chicken breasts(I use the individually wrapped frozen ones from BJ's)

shred and chop the chicken

1 cup of blue cheese dressing

1 block of cream cheese


1 cup of Franks Hot sauce (you could use less-this makes it pretty hot)

mix together and then bake at 350 for about 30 minutes. Serve with tostitoes scoops.
