What would you do with extra night?

Have a week long trip to WDW coming up. It will be DH and I and SIL and BIL...we are empty nest and going for F&W. We made all FP and ADR plans a while ago. However something came up where I will be driving down the car by myself and everyone else is flying in. So instead of driving partway and staying over night in hotel off 95 I decided to book a night at Pop Century and drive straight through to Disney. I aim to arrive around 5-6pm.

Question is: what to do? Make FP at a park, which park? Or just pop over to DS? Where to have dinner...food court at Pop, TS at another resort, TS or CS at DS, CS or TS at park???? I started to make FP plans but really not needing to do any that we miss the rest of the week as we covered most everything and we go so frequently that I just don't need to do any rides. But I could. I could go to DS. I could do monorail crawl and have drink and snacks at lounges. I could book a resort TS we haven't done yet like The Wave, Turf Club or Grand Flo Cafe...also haven't tried some new places at DS.

So what would YOU do?
 
Or pop over to Epcot and wander around and enjoy F&W. I've found you can't have too many days at F&W.
 
I forgot to mention that we are staying at BWV for the following four nights after Pop...then AKV the last three.
 

How about monorail crawl kicking off with dinner at the Wave? We really enjoyed our dinner there. Be sure to be somewhere from which you can see the fireworks when they commence.
