My dd is 16 and her favorite thing at WDW is to be given her independence. She loves to go off on her own to sit and people (read: "boy" 
) watch, esp. at dtd. She'll sit in Virgin Megastore for hours just browsing thru the books. She also loves roaming the countries, esp. Japan, in Epcot.
Other things she likes: Disney Quest, trying different snacks in the world showcase countries, going to a movie at the dtd theater.
