sunscreen - I don't bother. I don't go in August, but I've never gotten a sunburn at WDW either! We go in the parks all day, but you are not sitting outside like at the beach all day. At teh beach, sunscreen is a must!
hair dryer - unless you are at a value resort, most rooms have them - even some of the value resorts, and the ones that don't will lend them - I don't bring one.

soap - I'm particular about my soap products, so I bring mine, but most resorts do supply these. Shampoo can double as laundry soap in a pinch for hand washing items in the resort room sink. It can also be used as dishsoap ina pinch. I tend to use low-fragrance shampoos!
mesh laundry bag - I bring a few zip loc bags usually for my soaps, you'll collect WDW plastic bags in a hurry to use for dirty laundry. Most WDW reosrts also give you a plastic 'laundry' bag, too. I don't bring this.
Most resorts have some hangers. Enough for my needs.
Kitchen: - If on-property you don't need most of this. If you must bring some of these, get travel sized tubes.
garbage bags - again those WDW bags suffice. Any shop can give you some and they are STRONG - they can even be used as carry-on luggage!

ponchos - I skip these, unless I'm going in the really rainy season. Usually one hooded dark sweatshirt works for me - or maybe a windbreaker. Often the rain in Olrando is heavy, but shortlived.
phone & charger
I love Rick Steves quotes on packing - "Plan for the best case scenario - not the worst." If you KNOW you need a certain medicine or pillow or something, then bring it - but if you don't have a cold, or headache - you can get basic medicines at WDW - and the price for the amount most folks would need is just a few dollars at most. Every resort gift shop has all the basics. Plus, I really think that if you plan for getting sick, you will. If you plan for staying well, you almost certainly will. Staying well hydrated is KEY to staying well!
I am bad in that I often bring enough clothes so I don't have to do laundry while at WDW, so I sometimes come home with things I haven't worn. more often than not, I find that I prefer a certain pair of shorts or something, and I wear them twice.
I HATE to carry more than I have to. In the evenings at WDW especially, I try to bring only the items that will fit in my pockets. This makes life SO much easier at WDW! It helps if you wear shorts that have multiple secure pockets! Men's cargo shorts are great (Let him carry the camera!, two water bottles). For me, I strongly prefer shorts (usually kahki type) that have an extra pocket near the knee. I don't want to be bothered digging through a backpack for my cellphone, park ticket, or money (cc card). I also don't want to risk losing them. If I've got them in a secure pocket, then I don't worry and can grab them in a hurry. It also helps if you don't have to deal with a belt, string-tie, or a button that is hard to undo (quick potty breaks!)
If you have a stroller with a basket, then you can bring some extra water, diapers, that sort of thing - but if it's just two adults - you DON't want to have to deal witha bag of any kind. It makes the trip so much more enjoyable if you don't have to worry about remembering a bag everytime you get off a ride.
During cold/rainy weather than you will need a cover -up of some kind. A dark colored sweatshirt witha zip front and a hood is great. going tothe room for long pants is a must some nights, but then you can change for evening.
If your guy doesn't wear sandals, it still makes sense for everyone to bring two paris of walking shoes. No matter how comfortable each pair is, trading shoes can be a lifesaver for tired feet.
