We were given a large bag of shredded lettuce. I would like to use as much as possible. I know tacos are a given. Any other suggestions?

salad- We have salad for dinner at least once a week. We like Taco salad and ceasar salad with Chicken breast.

* do a chopped salad! You could do a chopped cobb, chopped BBQ chicken, chopped taco salad, etc.
* toppings for burgers or grilled chicken sandwiches
* BLTs

Anywhere you would use leaf lettuce or even cabbage would work. Nice chopped salad, top a burger, fajita's, if you like asian flavors you can mix a little asian dressing, or peanut sauce and some chicken if you are a meat eater or tofu, diced green onion, make a moo shu pancake (tortilla or crepe would do in a pinch) to eat it in. Sandwiches for dinner are always a hit at my house too, peppers, onion and mushrooms in a pan slice italian bread lengthwise put the pepper mixture on one half with a little shredded moz. cheese bake in the oven until the cheese melts and the untopped side's bread toasts, take it out and put the lettuce and tomato on the other half, salt and pepper to taste, close up and YUM!

As PP mentioned- salads:
Play Salad Factory for dinner-
Like build your own taco only with salad fixings- you put out the healthy stuff and *they* get to decide what to put on their plates.
This is one time it is kinda cool to play with your food, be creative, make faces, any kind of salad art- favorite animals, etc
Fruits:
canned oranges, strawberries, grapes, pineapple, raisins, craisins, apples- anything you have on hand.

Veggies- whatever you have but consider prepping them differently- making ribbons of carrots or cukes with a veggie peeler or shredding them (hair for a face or beard or mane for a horse)

And of course, lots of your lettuce :thumbsup2

There are so many choices of fruits, veggies, meats, cheeses, seasonings, dressings, that salads can taste very different- italian, greek, asian, caribbean, african, hawaiian, german.

Of course, you can use the lettuce on sandwiches and wraps too.

If it's a really ENORMOUS bag of lettuce, you could always call a friend and offer them some. :goodvibes

Make the BLT soup. Tomato soup with chopped crisp bacon and shredded lettuce on top of the hot tomato soup. Serve with Grilled cheese sandwiches -- you can add tomato slices and grilled bacon to the sandwiches. They are so good dipped into the soup.

Chicken salad-- olive slices, tomato, cucumbers, any vegie you have on hand. We always add some shredded cheese to each salad as plated. Plenty of croutons are a must.

Make your own beef or chicken burger with all the fixings.

A side of salad with salad fixing as a side to a regular dinner.

Just wanted to mention that if you place that salad in a plastic bag, and place a paper towel in there to absorb moisture..then get out as much air...
it lasts so much longer!
LOVE salads.....all kinds YUM! Enjoy!

Grill it in a skillet. I drizzel it with olive oil sprinkle generously with salt and pepper and litely grill it.

This method is great for romaine hearts. Just split down the middle drizzle with olive oil, salt and pepper and put in on the grill. No salad dressing needed.
