What to do with leftover chicken

I had a surprise 40th birthday party for DH on Saturday. Amongst everything else, we have quite a bit of baked chicken left over. Any suggestions?
 
Put it on Ceasar salad. Depending on how it is seasoned you can chop it up and make quesadillas, put it in enchiladas, tacos, chicken casserole (like chicken, rice,& broccoli), add it to stirfried vegies, or shred it and add bbq sauce to make "pulled meat" sandwiches. How about chicken salad? Or something like white chili or chicken pizza.
 
This is an easy one and I look forward to having leftover chicken to do this!

2 premade pie crusts (or make your own - I keep a package in the fridge for quick dinners of leftovers)

cut up cooked chicken
frozen mixed veggies (the kind with beans, corn, peas, carrots, etc)
Chicken gravy (canned, jar, or mix up from some canned chicken stock and a little flour)

Place 1 crust in the bottom of a pie plate

Mix chicken, veggies, gravy together and add to crust

Top with second crust - cut a few steam slits in top crust

Place on cookie sheet (to catch the drips!) in oven at 425 degrees for 15 minutes. Reduce heat to 350 degrees for another 30-45 minutes. Ready to eat when crust is browned and gravy is bubbling!

Serve with a tossed salad and you're ready for dinner.

How about chicken soup??

Use chicken boullion for your base or buy a packaged soup and add the chicken for a chunkier coup.
 

Thanks! I knew I could count on the DIS for some ideas. My brain is so fried from planning the party and keeping the secret, that I just can't think! I'm off to the grocery store now to get some ingredients that I don't have on hand. I figure if I make the chicken enough different ways, we won't all be clucking by the end of the week!
 
Oh yeah! Chicken Pot Pie, one of the great comfort foods, Yum! Yeah, I will use frozen veggies and stuff, but its hard to beat hand-made crusts. And since my Mom had me making pie crust since about age 7 (now 40), I can do it in my sleap. I favor a butter and crisco combination for both fruit and meat pies, tho with a vegetable (eg cabbage & mushroom) pie I might go with some cream cheese for an extra tanginess. In chicken pot pie I also like to add a little tarragon, thyme and savory to my gravy, in addition to the usual salt and black pepper (maybe no extra salt in a canned gravy tho, salty enough).

Yum Yum, chicken pot pie cannot be beat.
 
We like cutting up leftover chicken into small pieces and mixing it with bbq sauce for sandwiches. Just pop in mw for a few min.

How about chicken salad?

Break chicken into very small piece and mix with mayo, diced celery and add salt and pepper. Serve on bakery rolls.
