do the parks open most of the time? I'm trying to figure out if we can eat breakfast most days at the condo or if we'll have to eat in the parks, etc.

Most of the parks open about 9am, unless you have EMH ? Check allearsnet.com, touringplans.com, or wdw web for scheduled hours. Most people suggest you arrive at least a half hour early, and give yourself time for parking, shuttles or ticketlines. Happy planning.

Generally, you don't want to waste time (or money) eatng breakfast in the parks - unless its a character breakfast.
